My daughter and her family will be here in about an hour from Arizona for the weekend. Tonight I'm making probably my oldest recipe, a sausage-eggplant spaghetti sauce from the cookbook her son Gene wrote.
Ingredients
1 lb Italian sausage, rolled into bite-size balls
1 large eggplant, cubed
4 cloves garlic, smashed
Parsley
3 Tbs olive oil
2 oz salt pork, diced
3 green peppers, sliced thin
1 large onion, sliced
4 cups whole or diced plum tomatoes
Directions-
Heat butter, oil and salt pork (today I used oil and bacon fat) in a large pot. Add onions and brown. Add sausage and brown. Add garlic and parsley, salt and pepper and cook 10 minutes. add pepper and eggplant, cook 5 minutes. Add tomatoes and liquid and simmer until done. Serve over your favorite pasta. Manga
