NFT: Anyone ever dry brine a turkey?

Sounds easier than a wet brine.

I've never tried it mainly b/c the wet brine makes some delicious bird I don't bother messing with it.
bringing two birds tonight. one for the deep fryer and one for the oven.
I like it better, and it's much less work.

Just slap some coarse salt (and maybe a little sugar) all over it, wait overnight, rinse off, dry, and cook.

it's a different flavor and texture. Personally, I'm bigger on the wet brines for really lean meat like turkey and pork. Since it's only marginally harder to do (unless you have a space constraint in your fridge), I opt for the wet brine.
