Gillbride/Coughlin's offense relied on option routes a lot more though.

It's quite possible that Beckham is allowed to read the safety on this play and then decide if he's going corner or post. That would be a fairly basic staple of most offenses, not something unique to Gilbride's.
IIRC from the Gilbride playbook floating around from his Houston days, many of the routes would have 3-4 different options for the WR. So instead of simply deciding between corner/post in the above, the WR might also be able to turn it into a comeback route.
MIddle of the field open = MOFO = Post
Middle of the field closed= MOFC= Vertical
That's a simple option route used at all levels of football.
