NFT: Corned Beef and Cabbage

Gonna make it this year:


seeing different places where you only put the cabbage in the slow cooker for the last hour, and some saying have it in the entire 8 hours.


anyone with experience?


also some places saying carrots and potatoes for only half the time too.

it in a slow cooker, but you shouldn't need to out it in for the whole 8 hours. It will turn to mush.
1 pot. Cover the corned beef with water. Bring to boil. Simmer till

Corned beef is great. Cabbage is awful.

...You can combine the cabbage, onion, carrots, and potatoes together, giving each appropriate time to cook before adding the other.

How long to boil the beef depends on how large it is. Generally no more than 2 - 3 hours. Then make a mustard/vinegar/sugar sauce.

going to make it in my dutch oven. will bring it to a boil on the stove top. Then will put in the oven for about 6 hours at 225.

I can see putting the potatoes in there one hour before but the cabbage is the last thing. In fact, when the meat and potatoes are done I would pull all of that out and THEN drop the cabbage in to boil it for a little while.

I started making it kinda like I make bbq brisket in my smoker. I use a pepper rub and oak wood pellets (traeger smoker) and smoke it for 3 hrs than raise the temp to 200 for a 3-4hrs than wrap it in foil and cook until tender. Its just a cured brisket.
I know this is nontraditional and not practical for some but it it is absolutely
awesome.

1. Don't toss the cabbage. Yes, it's nasty but...Cook some bacon till it's just a little browned and not yet stiff & crispy. Chop the bacon into pieces, about 1" long and toss them in the pot with the cabbage.
It makes nasty old cabbage taste great!

2. Be careful buying corned beef. Ask the butcher which cut looks the best. There's nothing worse than cooking one up and having it really grisly. It's hard to tell the difference by eye.

Yes, its closer to pastrami, I dont use the spices that you would use for pastrami and when you wrap it its more like braising the meat and it stays moist, Its a tweener. When I cure my own briskets I use a dry cure to make pastrami and a brine for corned beef. The dry cure gives a more complex flavor.

I do it a little different. I bring the beef to a simmer on the stove, then finish it in the oven. To cook the potatoes & carrots, I usually pot them in a separate pot, and cover them with the corned beef cooking liquid (broth). I shred the cabbage, and cook it in a large pan in a little oil, then add more of the corned beef broth once it begins to wilt. I like the corned beef flavor with the vegetables, but hate cabbage that is cooked to death with the corned beef - smells too much like natural gas, if you know what I mean.
