Then there would plenty of game hero's that could make the list.
But the first name that came to mind who didn't have a long celebrated career with the Giants but yet embraced being and embodied being a NY Giant as much if not more than any other player I have watched put on the uniform was Rob Carpenter. He brought something special to the team and was no small part in there first return to the playoffs in almost twenty seasons. IMO he was an important figure in Giants history and was as easy to root for any player. He also gave one of my favorite quotes from a player when reflecting on what being a Giant meant to him he said that being traded to the NY Giants was the third best moment of his life after only his wedding day and the birth of his children.
If I had to select one player that would be a perfect example of what this thread is asking it would be him.
