As for other activities, do you mean off the strip, sightseeing?
If you have a car and haven't been Hoover Dam is one of those I need to see it at least once attractions.
Plus last time out we drove 30 minutes outside of Vegas to see Red Rock Canyon, and it was worth the half day. Nice scenery, some cool trails and interesting wild life.
is separate and quieter than the Venetian itself, has an Emeril Sports Bar downstairs, and a hidden exotic car showroom way downstairs with cars from movies and TV. It's also close enough to the Wynn and the rest of the Strip that walking isn't that much of a chore.
Planet Hollywood or Ceasars. PH casino has a nice vibe, good location and rooms are fine. Ceasars has better restaraunts but the walk inside to get anywhere can be frustrating.
Some restaraunts you must do would be THE STEAKHOUSE in circus circus, Nobu in ceasars.
in the palazzo is one of my favorites, I consider the palazzao restaurants part of the venetian, though the venetian shops have many great restaurants in their own right.
but they're connected (venetian and palazzo) and just a short walk to the Wynn, so all the restaurants are easily walkable in any of the three.
stay at Planet Hollywood as well. They just put a shake Shack in across the street near Aria. That and In N Out Burger are my low-cost grub.
For higher end stuff, You can't miss on any restaurant at Wynn.
For breakfast, I still go to the Peppermill down by the Riveira and I also try to get to one of two other places off the strip. Lola's has fantastic New Orleans cuisine - it is between the strip and Downtown. I also try to get to Lotus of siam which has the best Thai I've had. It is in a strip mall off the strip.
the Encore last weekend...Tower Suites section. Rooms, hotel, and restaurants were all incredible. If you're there to party, Encore Beach during the day and XS at night (both in the hotel) were great. Also recommend SW Steakhouse and Sinatra's for dinner (also both in the hotel).

B&B Burger was my favorite. Try the "Royale with cheese" burger. Fabulous.

Skydiving out there is a kick in the pants and well worth the coin.
I had fun flying in a helicopter over the strip.
The ice bar is mildly entertaining.
Don't forget the sports book - bet the Giants to win it all!
