We have lights with a 2' drop over our peninsula range. I'm 5'11" and they don't come close to blocking my view. Eyes are several inches below the top of your head. You'd have to be at least 6'6" before it started being an issue.
They are 81" off the floor, so they obviously don't interfere with anything.
Probably a bit higher than you'll see recommended, but they work fine at that height.

Baa. OK, the livestock part piqued my interest.
