On the Giants he could crack the starting lineup in the next year or two. He's got Pro Bowlers ahead of him on the Pats. Maybe he plans to get good experience working with them?
He is behind Gronk, Martellus Bennett, and Michael Williams. His only real shot is the practice squad. The only logical reason I can think of as to why he chose the Pats is that they offered more guaranteed money.
they have Gronk, Martellus Bennett, Clay Harbor, AJ Derby from last years draft, Michael Williams who they traded from Detroit (and plan to play at TE), and Keavon Milton.
that was before this year's UDFA signings
Steven Scheu, TE, Vanderbilt
De'Runnya Wilson, WR/TE, Mississippi State
so Williams makes TE #9 for New England with 4 of them at least a good chance to make it.
I don't even see best case practice squad for him.

Wilson is backing out of his deal with the Patriots and the slot that opened is being filled by Williams.
I think Wilson made the right move and Williams the wrong move.
It will be interesting to see where Wilson lands now, if what I was told is accurate.
Over who? If he was better than Adams we would have drafted him. Tye and Donnell are not getting cut.
