NFT: anyone else Smoking up a storm?

I got a few racks of your basic St. Louis Ribs on the pit and a couple of half-chickies ready to go in a little while --- spent the morning making coconut crema custard for creme brulee and coconut macaroons -- and preparing the potatoes for tater salad.

Mrs gidie is chopping the slaw, the sun tea has been out all day, the cooler has lots of ice, and company is on the way...

What a nice hot lazy prelude to summer!!

I acquired a small (2.5 lbs) butt roast. Applied a nice dry rub. Tossed into a convection oven at 250 for 7 hrs. Then I'll remove the foil tent, set the temp to 400 for about 50 mins. Once it hits 190-195 it comes out and will soon be pulled pork.

But last week I made and smoked a large batch of kielbasa and basque chorizo.
We smoked a turkey breast today, wrapped in bacon.

That sounds really good. Did the bacon turn out ok after being smoked for so long?

Took me a while to perfect controlling the heat. Did a brisket on Sat and yesterday turkey legs I marinated in brine for 24 hours.
