Big egg lover, we get ours from a local farmer and they are delicious. Wife and I happened to have a free day today so we decided to try this method of cooking them for a brunch. We added smoked salmon and some Arugula to it and I sincerely mean it when I say without a doubt this was the best egg recipe we have enjoyed. If you like eggs this is a really nice Sunday recipe.
Big key to it is no seasoning until the end and on the heat for 20 secs, off the heat for 20 secs while stirring the entire time.

We cut the butter to 2 tbs for 6 eggs and also eliminated the 1/2 tbs of Sour Cream at the end.

Yeah, I know but you really don't need either. I would go with more butter in the beginning instead of the Creme. I used the smoked salmon and the arugula to cool it down instead.

I had been making them with just oil in the pan and no dairy additive w/ just enough of a whisk to break the yolk. It's a nice daily healthy way, but for that every now and then decadent breakfast this rocks
Yup, that on and off the heat with the stirring seems to be the key
mushrooms and tomatoes look really great!

Not sure I cook 'em quite as much as you do, but I agree about not liking the soft custardy eggs.

And those were some pretty ugly looking eggs IMO.
