NFT: Gordon Ramsey's Scrambled egg recipe

Big egg lover, we get ours from a local farmer and they are delicious. Wife and I happened to have a free day today so we decided to try this method of cooking them for a brunch. We added smoked salmon and some Arugula to it and I sincerely mean it when I say without a doubt this was the best egg recipe we have enjoyed. If you like eggs this is a really nice Sunday recipe.

Big key to it is no seasoning until the end and on the heat for 20 secs, off the heat for 20 secs while stirring the entire time.

We cut the butter to 2 tbs for 6 eggs and also eliminated the 1/2 tbs of Sour Cream at the end.

Be careful creme fraiche and sour cream are not the same thing, great recipe though.

i actually should try this method. i generally:

1) whisk the eggs and make it frothy beforehand
2) add milk to the whisking
3) pour the whole thing into a pan

Camp Filthy does their eggs like this a lot

when we have time. Keys are constant movement and leaving those bad boys moist.

Yeah, I know but you really don't need either. I would go with more butter in the beginning instead of the Creme. I used the smoked salmon and the arugula to cool it down instead.

I had been making them with just oil in the pan and no dairy additive w/ just enough of a whisk to break the yolk. It's a nice daily healthy way, but for that every now and then decadent breakfast this rocks

ive done the butter thing before. and i tend not to salt the eggs until after their done as well. ive never cooked mine exactly like that though.

mushrooms and tomatoes look really great!

"Sour cream is a great substitute for creme fraiche. The result will be just slightly more sour than creme fraiche"

I have just never been able to acquire the taste for soft, curdled, custardy scrambled eggs. Even at home I prefer them cooked to shit on a griddle in one, lightly browned, omelet style piece.
this is a GREAT way for eggs

is an old secret. Same with not melting the butter all in the pan but in the eggs as you whisk them. I add cheese, shredded Cheddar to mine too.
Am I the only one who can't stand creamy scrambled eggs?

I look at that recipe and says that sounds like a bunch of delicious ingredients prepared to a disgusting texture.

Not sure I cook 'em quite as much as you do, but I agree about not liking the soft custardy eggs.

And those were some pretty ugly looking eggs IMO.
