We would be getting 3 first round talents. Sign me up if at all possible. And I don't know a lot about the Colorado CB but people seem to be very high on them so that would be like 4 homerun picks in the first 4 rounds.

Em. Don't think Lamp and Engram will be available in the second and third rounds. Witherspoon also has a serious aversion to tackling. Love Coward and Magliore in the sixth and seventh rounds.
For a team that has used at least 2 of its top 3 picks (last year 3 of 3) on either WR, DL or DB in every year since Reese has been GM. (And it wasn't that much different under EA.)

Hell, if there was a mock with 7 top round picks listed, people would be like "Man, that's brilliant". It's as likely to happen as the Browns winning the Super Bowl, but it happens routinely.
Nice draft but how realistic? Engram is a early 2nd rounder to me. Lamp a late 1st rounder early 2nd. McCaffrey is a great player but a rewind of Vereen. The rest of the draft seems solid.
And enjoyed the quality with which you present/produce your videos.
That said, and as other said, I think the problem with Engram in the 3rd is that he probably won't fall that far. You gave disclaimers that it's based upon your scouting rankings... so you covered this.
Personally, I hate RB in round 1, and especially McCaffrey. I like him the player, just to me he's a bad team fit in a draft that is deep in RBs... I feel like the RB position is one you can wait on until round 4, and realistically, round 3 would be the earliest I would like the Giants to take one. You definitely found some guys late that I'm not familiar with, thank you.
In terms of Forrest Lamp, I don't think he has upside to play tackle, but I think he'll go between pick #20-#40, so don't think he'll be in play either.
No issues with the Witherspoon pick.
Here's my most recent mock draft... I'm sure people will hate it because no DL, but I mostly went BPA based on my evaluation (with commentary):
Rd1/23 - OT Garrett Bolles - The debate will continue until draft day, but I believe Bolles is perhaps the best OL in this draft, and he's an immediate upgrade and starter at LT. Moreover, I don't think he'll have problems adjusting to the pro game like some others think, and believe he's more than worthy of being a first rounder and being selected here. I really believe in Bolles, I think I have the most confidence in him and his game translating to LT for the New York Giants and giving the pass protection that Eli Manning deserves in his last several seasons more than even Ramczyk, and any other candidate currently on the Giants' roster. He's being sold short, and I'd encourage anyone to watch him play.
Rd 2/55 - S Obi Melifonwu, UCONN - I can't believe he fell to this spot, and doubt he will on draft day. But Melifonwu is more than just a safety. He's a defensive weapon with the range and size to play safety, the speed to play corner, and I think he can even play the WILL if he can get a bit more stronger and more physical on passing downs. I don't think drafting him means Darian Thompson wouldn't have a role, either... Spags will utilize all three of his safeties, and Melifonwu's and Collins' versatility would all for a lot of creativity. My only question with him is if he is more athlete than football player, but he did have 118 tackles last year and 4 picks, and was a standout performer the week of the Senior Bowl.
Rd 3/87 - WR ArDarius Stewart, Alabama - BPA here, I've been a fan of Stewart's for awhile now. He really just started to show what he could do last season, but with the Alabama passing attack not all that imposing, his opportunities were limited. Stewart would be a special teams ace, great returner, and can play inside or outside at receiver. Get the ball in his hands, he's another weapon, and I think he has a chance to be special.
Rd 4/140 - RB Wayne Gallman, Clemson - BPA again, would be pretty astonishing to get Gallman in the 4th, but you can't pass it up if he's there. He's an all-around back, runs with uncanny power, and I believe can carry the load or be a great complement in a rotation, which would be his role with the Giants as a good 1-2 punch with Perkins. People may want a more obvious power back, but despite his average size, he runs with plenty of power.
Rd 5/167 - CB Damontae Kazee, SDST - Kazee has that bulldog in him, he's a mighty mouse at 5'10", 184... plays with the physicality of a larger corner. He'll be great on specials, I think he can be a good nickel, and he looks to make plays on the ball. Fiery competitor and I think he'd be a great 3rd or 4th corner for the Giants long-term.
Rd6/207 - OT/G Aviante Collins, TCU - He played OT for the Horned Frogs but would be a guard for the Giants. He may need a redshirt year to get stronger. He visited with the Giants so don't be surprised if he actually goes to them. If he develops, could eventually be an OT down the line. Great athleticism, has the tools to be a really good player one day. I see him as a good, upside zone blocking guard.
Rd7/241 - RB Joe Williams, Utah - Most people aren't going to like that I took two running backs in this mock (and two OL), but if Joe Williams is available in the 7th I don't see how you can pass, and there's room on this roster for two RBs to come in. Really productive, really fluid hips and cuts, and homerun speed. He has flags, and he may be off the Giants' board, but he has a ton of upside rarely seen in the 7th round.
I like McCaffrey and feel he is better than Perkins, but we do have Perkins who's a pretty good rb. If he's available, I'd like Bolles with that pick. If Lamp is there in the 2nd, he's a no brainer, but he isn't likely to be there.
