NFT: Vacation boot camps?

My FWB and I are thinking of doing one of those one-week vacations that includes an organized physical activity of some sort. Like a boot camp or a dude ranch or a rafting trip. What are some other similar vacation ideas?

She's an avid hiker in great shape and she doesn't mind roughing it during the day, but by night she insists on clean, quality accommodations. So keep that in mind if you have suggestions.

I love Dominica as a destination. Perfect for the outdoor enthusiast with great diving in the morning and hiking in the afternoon. The Fort Young Hotel is my go to spot for accommodations. Trafalgar Falls, Emerald Pool, Boiling Lake, are all must see hikes. And I prefer the south end for diving.

It would help if both of you are able to swim, and I'd be careful and investigate as to how safe the outfit you're going to select is. There's risk to any outdoor activity, but you want to be sure the company you're using takes safety seriously.
