There was a Chinese joint in Penn Station that served this way, via conveyor belt, for many years. And growing up on Long Island, there was a place in Huntington called Hamburger Choo-Choo that perfected this train concept back in the 80s. Anyone else remember that spot?

I think the original sushi place like this is in San Francisco. I went there many years ago, ironically before I acquired a taste for sushi.
