Mainly because the throwback concept mixed in. Most teams just make the jersey pant and socks the same color but by going all white as opposed to all blue it allows the resurrection of the 80-99 road uniform, but with the brighter Blue helmet.

Yeah I believe this started in 1981, and the Giants beat the Cowboys 13-10 on a Danelo Field Goal. Went to the play offs for the first time in 17 years.
Also in 2005 they played the Saints at Giants Stadium because of Katrina, and wore the road white and won the game. It was considered a Saints home game so...partial credit?
It does not matter what color the Giants wear, and it has no effect on whether they win or lose the game. If the Giants had worn alternate red jerseys for every game in 1986, they still would have been 14-2 and SB champs.

I would have guessed a little later, although it was really just a Parcells era thing. It wasn't so much a Giants superstition as much as a Dallas superstition. Supposedly, Dallas did not like wearing their blue jerseys.

I also like the current helmet color with the color rush. The Giants can't do a full throwback design to the dark blue helmet because the league doesn't want players switching helmets for no reason.

They lost in the whites last year to the Eagles and again this year to the Cowboys.
