I love a seared rare (never been frozen) tuna steak. I use Chef Paul Prudhommes' "Blackened Redfish Magic" as a rub, then sear it for about a minute or two on each side using a cast iron skillet and real butter (never olive oil for fish) for grilling.
The combination is incredible. Yet there is one way to improve it (IMHO)
I discovered earlier this year that Newman's "Mango Salsa" as a dip actually enhances an already perfect tuna steak. I was skeptical (not wanting to experiment with costly meat), but tried it even though fresh tuna at Wegmans is 27.95 a pound.
If you need ketchup on your steak, you either need to buy better meat, find a better recipe, or go through puberty.
