So I have FarCry 5, GTA5, did the Star Wars Battlefront II thing, Gears of War, CoD WWII, Destiny 2 and Metal Gear V. I need an immersive game experience with a good long story line/quest. FarCry and Metal Gear so far have been my favorites story wise but is there anything out there similar in scope with an open world feel that has a ton to do? Any help will be rewarded with the emoji of your choice.
With that being said I can’t wait for RDR2 and to a lesser extent bo4 zombies

Uncharted 4, the DLC from Uncharted, Last of Us, God of War, Horizon Zero Dawn.
And then you have the games coming out soon like Last of Us 2 and Days Gone.
Pick up God of War, Horizon Zero Dawn, and the Last of Us. Add in Shadow of the Colossus remake too. You'll thank us later.

Well worth the price so far and the scope is massive.
Also, if you haven't played Witcher 3, that's another awesome open world game that is massive.
None of the Xbox ones are either, fwiw.
So far, I haven't had to interact with any other players, although that option opens up at Level 10.

Is it a continuation of the older games with all new stuff or more of a remastered online game with some of the old content from past games?
Can you chose an option to play solo, or must you end up playing multi player?

Before I had a 8-month-old, I also loved the Witcher 3. That is an incredible game that I still haven't finished.
I'll probably end up getting the next XBox system beyond the One, but as I could have never imagined buying an XBox One in the first place, never say never.

I play Fortnite with my little cousins, but I am so awful at building that it becomes a hinderance.
My son likes to play it, so I play it with him. He can build well but like you I'm not fast at it. Do what I do and just sneak and hide. I actually get pretty far doing that because nobody is looking for you in most places already natural to the world. They are looking for ramps and structures that someone built.
It's a short campaign, but I've heard that Hellblade: Senua's Sacrifice is nothing short of amazing.
I played a ton of the division when it came out. Fun, but the bullet sponge way of making bad guys harder is dumb and completely opposed to the realism the game was pushing otherwise. The lack of end-game content make it boring after a while, though the whole idea of the dark zone was very cool
Elder Scrolls online is fun, but don't expect Skyrim with friends. Like all MMOs it has recurring events and the world can't change much with you because other people are involved. Not as absorbing, but again, it's fun.
Battleborn is such a great competitive shooter game. Has some fun story missions as well. I played hundreds of hours of overwatch. Probably over 500. Once I got into battleborn, Overwatch just felt so shallow. I wish it had more success. It deserves more.

Elder Scrolls has some concepts from the previous games, but it is not a continuation. As Moondawg said, it isn't Skyrim with friends. You'll constantly see other players running past you that you don't have to interact with and in battles, you will often be fighting the same targets as another player. You can choose to play solo or you can choose to play with others, and it is strategic. There are dungeons that are meant to be conquered by groups, but they aren't essential to "winning" the game.

Look at ESO as a multiplayer online game such as World of Warcraft. There is some Elder Scrolls 'lore' but fundamentally it is about doing quests for experience and at the higher levels, grouping and doing the equipment grind. I played it for about a year and then hit a wall and lost interest. It's definitely worth giving it a shot though.
You do not need a subscription to play, but there are some significant benefits to playing if you do choose to subscribe.

My son started playing a game (H1Z1 Battle Royal) on PS4 similar to Fornite but with no mining or building. I like it much better than Fortnight because no building and more realistic fighting. There is also vehicles available which add a fun dimension to the game. In squads you can all pile into a vehicle together and shoot other teams while the driver drives and tries to best positions you. You may want to give it a try.
