NFT: Kosher salt shortage

The last 3 weeks my supermarket has been out of kosher salt, all brands including their own. Yesterday I also checked Safeway, and they were out also. I googled it when I got home, and apparently there has been a strike by Canadian salt miners going on since February. I guess it's finally caught up to supply. I was running low, and did manage to buy a couple of boxes on Amazon. Any of you notice a problem?

Still have a box or two. Had the same situation with yeast during COVID and also overstocked. In many situations you can just substitute sea salt. Kosher is basically less salty non iodized salt, no?

I know it is not Kosher but don't companies sell ancient sea salt from Utah?

I don't know if it's actually less salt than table salt. The
chrystal size is larger, so when you measure it a lot of air is between the crystals, so volume wise you need twice as much as table salt. But going by weight, you use the same amount

This. The salt is the same by weight. The crystal size makes it take up more volume.

And Kosher salts don’t measure equally (by volume) between brands. 1 tablespoon of Diamond Crystal Kosher Salt weighs 10 grams, while 1 tablespoon of Morton's Kosher Salt weighs 15 grams. And a tablespoon of table salt weighs 19 grams. Most recipes that call for a volume of Kosher salt are using Diamond Crystal, so you have to convert if you have something else or the dish will be too salty.

in the same way that we accept that most fruits and vegetables that we buy in the supermarket, or grow in our yards, are kosher.

They are naturally kosher because they do not need to have rabincal supervision. There is nothing that makes them unkosher.

I always use the Kroeger store brand so I don't know the crystal size. But I've never had a noticeable problem. The real problem is using table salt instead of kosher in a recipe. I always play it safe and use kosher, unless the recipe specifies otherwise.

I was shorted a few times on deliveries. Last delivery I doubled up (Diamond Crystal). This thread is reminding me to do that again next order.
