NFT: Grilling ribs

I am planning to slow grill some ribs for Fathers day.

I usually do 2 racks. One with bbq and one without (father in-law can't stomach bbq sauce or rub). So, I will put bbq rub on one rack and salt, pepper and mojo on the other. I then wrap them in tin foil with a little space on top. and slow grill them (200-250 degrees) for about 5 hours.

Ant other tips that I can try? I am open to good suggestions.

Prepare as you describe (make sure not falling apart - 5 hours is a long time in foil). Slice into ribs. Glaze with balsamic glaze (I use 5:1 vinegar: brown sugar), then grill to get some marks and crispness.

Braise them with Coke (or Pepsi) and sear them on high heat for just a couple of minutes. The sugars in the soda caramelize and help tenderize the meat.

Do your salt pepper pap cay type mix with whatever else you prefer. But make sure 50% of that rub has white and brown sugar if going for a savory/sweet profile. You then can rely less on sauce.

I place the ribs on the grill grate on top of a pan of water. Then smoke at 225 with heavy smoke for the first hour. After 4 hours, lather in BBQ sauce to taste for final 30 min.

ribs with no dry rub or sauce seem boring.

maybe just make the guy a steak.

No idea why but those poor ribs all by themselves made me think of this scene in Forgetting Sarah Marshall and the best thing is those ribs have the best table in the house - they'll be staring at the ribs with the flavorful dry rub that will eventually be doused and covered in sauce.

I am strictly a dry rub guy.
I like to spray an apple cider vinegar mix on the ribs every hour.
That much time in foil, they will be mushy.
For Sweet dry rub that adds a nice

Flavor I use yellow curry w garlic s & p and garlic

My favorite quick rib recipe is to rub, double wrap in foil, into the oven, low (225) and slow for 7 hours. Foil open, BBQ sauce on for the last half hour. Fall off the bone perfect. If I want 'grilled' flavor, I'll move em outside and grill em for 15 minutes with the sauce, but to me, more trouble than it's worth.

It's super easy once you learn how to tear the skin off the bottom in one shot.

This is how i do it as well. Perfect every time

Take off fascia if you like ( ribs curl less as they cook )
Pierce with knife randomly
Set grill at 400 ish
Put rack on grill for 50-60 minutes turning every 10-15
Baste when turn em with
Vinegar 1 cup, 2-3 tablespoons colemans dry mustard, 1 tsp salt , 1/2 -1 tablespoon red pepper flakes , whatever dried or fresh herbs you like 1-2 tsp ea not exact
I like fennel seeds, rosemary, oregano , but have used lots of different things

Quick, got a chew and mustard vinegar absolutely rocks
