NFT: Hot sauce questions.

smshmth8690 : 3/31/2018 11:35 pm
I love the stuff, enjoy all different styles, and heat levels. I have 2 questions, First: Has anyone else noticed a change in Frank's Red Hot lately? I like it, but it seems like it has been ridiculously salty lately. I don't know if the recipe has changed, but it just isn't the same.
Second question: What hot sauces are you enjoying lately?

Can't comment of Franks

Favorite supermarket hot sauce is anything by El Yucateco.
My go-to boutique hot sauce is anything by Big Reds, link below. The ghost pepper one is outstanding on beef. God's Wrath, I think it is. It's really not too spicy.

Oh, on eggs...

Tapatio. It's pretty mild. I don't like really spicy hot sauce on plain eggs.

Is pretty good, though far & away my personal favorites are Marie Sharps from Belize, or Melindas.

Sriracha, Sambal Oelek, Texas Pete, and a local place hot bbq sauce. Depends on what I am eating. But I grow my own Serranos and habaneros and make my own. I started with Rick Bayless recipe and I have altered to suit my tastes over the years.
I like Franks.
madgiantscow009 : 4/1/2018 3:46 am : link
buy it almost exclusively. Accidentally got the Franks buffalo recently. Not as good, a little hotter and saltier.
Poblano Hot Sauce is my jam
Giantology : 4/1/2018 6:04 am : link
Its hand made and local to Tucson, AZ but they sell online. I love ordering it in bulk. Its fantastic for Mexican food but goes great with just about anything (eggs, sandwiches, etc). My go to flavors are Mexican Hot Sauce and Green Jalapeo - sometimes Ill use both at the same time.

If Im out of this stuff, Ill go with El Yucatan, Tapatio or Cholula

Eaton's or Spur Tree Scotch Bonnet pepper sauce are very good
with plenty of bite. Too bad Golden Krust stopped making their red pepper scotch bonnet sauce. I thought this was the best. For tossing wings in a pan with butter Franks is my favorite.
I felt Frank's has always been very salty.
Bubba : 4/1/2018 6:41 am : link
When I know I going to use it I do not salt my food first.
When eating Mexican I prefer Chulula other wise Tabasco is my default.

Imo Frank's is vastly overrated, heat without much flavor or nuance.

is my fave. Use Franks for my buffalo sauce, mixed with worcestershire, vinegar, cayenne, black pepper, red pepper, celery seed, tobasco, corn starch and finished with butter). Also like Louisiana.
Basically chiles, vinaiger and maybe sugar?

It's F***ING vinegar and red.

I like an artisnal lime based hot sauce made with peppers and garlic or my own old fashioned fiery blend.

Cholula Chili Garlic- Excellent on a Jersey Burger with Pork Roll and Cheese. Such a good combination.
Tapatio for eggs/potatoes, El Yucateo Habanero for Micheladas, Frank's for chicken and ground beef.
Also keep Asian Fresh Hot Chile Pepper, Sambal Oelek and Calabrian Chiles in the fridge.
Still have some really hot Hatch Green Chiles in the freezer that I roasted last fall. Usually they wouldn't last this long but they are really hot. Just defrosted some to use in a White Turkey Chile.

I usually keep 3 of the Tabasco sauces around, plus Sriracha, I love the El Yucateco (artificially green colored habanero) the 3X is pretty good too.
I've gone and ordered a 12 pack of Poblano, and a mix of the Big Red's.
I plan on seeking out the NJ made sauces as well. I also like another NJ made sauce called Born To Hula. A bunch on unique tasting sauces. Here's a link to them.

And Kenji in particular put out a list of 30 great hot sauces last year. Ive been buying from the site mentioned (Heat Hot Sauce). I have many favorites depending on the type of cuisine. Todds Inner Beauty comes to mind. I havent had a bad sauce by Lucky Dog either.

I like hot sauce
pjcas18 : 4/2/2018 1:38 pm : link
spicy, but I don't like heat that is generated from extracts, I prefer real ingredients. I just think the balance seems more natural.

One hot sauce I tried that was really good is zatarain's cajun hot sauce.

I used to buy their dirty rice mix, and it is really good and easy to make, so I found the hot sauce and tried it. Nice blend of flavor and heat.

can you guys taste the food if your putting hot sauce on it. Someone mentioned it's too salty.I admit i'm a whimp when it comes to spicy food. On occasion I will add a little hot salsa sauce to my mild salsa.
