While I agree that his peak would be the situation you present, you also have to factor in that the NFL trade deadline is something like week 6. I'm not exactly sure which week it is but I'm fairly certain it is pretty early in the season.
On top of that, if Foles is healthy (as well as Wentz) I am sure Philly would love to move Foles because they love Sudfeld so now you have competition that could lower the return value.
Finally, Dave Te brought up in his podcast that TB should trade for Bridgewater. I think that is a great idea. They don't seem like they want to commit huge money to Winston for many legitimate reasons and they could get a long term deal done for Bridgewater on the cheap side. Or they could just have him as the backup all year and make their decision on which QB they want next year. Worse case is they tag one guy although that would be expensive.
A couple were right on the money perfect leading passes. He’s got talent. Someone will give him a shot. Philly perhaps after Foles’ uncertain status. I didn’t think RG3 looked bad either a couple of weeks ago. Call it preseason luck or whatever but he looked very competent
I do like Bridgewater and was surprised to learn that he is still just 25 years old. He could still become a franchise QB for a team, and as others have mentioned, it may not be a bad play to try to bring him in next year if Eli struggles this season. While Bridgewater didnt set the world on fire his first two seasons, neither did Eli his first couple years in the league, before he hit his stride a few years in. I think Bridgewater is a legit alternative to trying to find your next franchise QB by trading multiple first round picks to trade up in round 1, as several teams have done recently.
I like Teddy a lot and wish we had been able to make that move. It's just going to be difficult salary-wise and I don't think the Jets are going to be particularly eager to help us out.

Makes more sense to go with a healthy young prospect like Darnold but a team that's going dumpster diving for their next QB like the Giants have been could take a shot on him.
Only a team in immediate need for a QB would do that. If the Giants want him they can get him as a FA next year.
You have a lot more leverage if he is already on your roster. If he's not the starter, you get to see him every day in practice and meeting rooms. You also hold the rights to transition or franchise the player.

Also have to consider Minnesota was a run first team with Adrian Peterson and not many weapons in the passing game.
A lot of young QB's have underwhelming numbers in year one. Look at the jump Jared Goff made last year - he was pitiful as a rookie. Teddy can play and he will show it when he gets a chance.
Franchise QB? I don't know. But he can play and he can be a starter in this league.
I would suggest there is a good chance the Giants will find themselves some time soon making this sort of compromised solution to address the position. Just not now.

Shurmur isnt all that familiar with him since he was hurt for most of the time he was in Minn. If you are shooting for a middle of the road starter then he is your guy. I dont see him as an elite QB. I dont think the league values him that way right now either.

Why are we worried about backup? What's the end goal? Investing picks and $$$ in a backup on the off chance he can lead us to 8-8? What is the upside to Bridgewater on a team with the flaws this one has? 9-6 and a playoff loss, if we're lucky? 9-6 and 1-1 in the playoffs, if we're extremely lucky? I'll pass on that one. This team has no business investing picks or QB dollars on any opportunity that isn't part of the long term solution. Can we say that about Bridgewater, or is he just another dart to throw at the already crowded dartboard in hopes of getting lucky.

...if he gets good pass blocking (which implies a decent run game as well), then Eli will have a very nice season.
And if he is harrassed and harried in the backfield, this is probably his last season as a New York Giant.

Probably, be we don't KNOW that yet. We've made heavy investments in development QBs and we've barely seen them. Let it play out.
Also, it goes well beyond "who is better" when constructing a roster. Uber summed up one aspect of it fairly well.
