This is old - from February 2017, but he gives a really interesting breakdown of the Giants organization and their use of data in evaluating athletes and their performance, primarily from a training perspective. He discusses frankly the history within the org, how they introduced the tech to the players, and describes a single case (Herzlich) how he discovered a peanut allergy and had been eating PB& J before every game.
It's a long watch, but if you want some insights to the team, their thinking, and how they've approached using their data you will probably enjoy this.
