But as far as beef, I've never had anything but chuck. I assume I'd have to grind my own to do brisket. Is it really that good? You doing 100% brisket?
I get it from our local smoke house, the Catskill Smokehouse in Saugerties, NY. I won't be able to get back there till the week after next to ask (and get more) because I'll be away. Hadn't seen them before.
They were absolutely divine. My wife is not a big meat eater, and she loved it. Ate a full 1/2 pound burger -- I was shocked. It was soo soo flavorful, juicy, and tender - a different animal entirely. It was a revelation.
If memory serves you are something of a gentlemen farmer- any pig-related goodies coming up?

and I love brisket burgers. I do tend to mix in a little ground beef though. Either way I love it :) I have found that a lot of people tend to dry out a pure brisket burger unfortunately. It such a great cut of meat.

has a food truck and we make these as a special every now and again. Usually we blend it with a pork or chuck to get a fatty content mixed back in because we grind the left over brisket up for burger patties. They are really good but are a very inconsistent sell for us.

Johnstown area just west of Albany. I will be going to a lot of places like fairs and competitions too...as long as I dont have a lacrosse game to coach, lol.
That smokehouse in Saugerties is amazing. One of our daughter's friends who's a chef loves it too and over Memorial Day weekend we were treated to some amazing food. That bacon is the greatest though!

Blended with short ribs!!! The Bomb!!! LaFrieda sells a brisket, short rib & chuck mix burger, very good! I’ve had butcher blend me brisket & rib combo love it

I ground some 50/50 chuck/short rib once and thought it was outstanding. But brisket can be had for so cheap from Costco.
