NFT: BBI Bakers - Brownies crumbling - Overcooked or Undercooked?

Grey Pilgrim : 7/14/2019 12:38 pm
Hey,

I made these brownies last night and they're crumbling and dry. Did I overcook them or undercook them?

TIA

May not have anything to do with your results....
KeoweeFan : 7/14/2019 1:12 pm : link
but the FIRST thing to check is the accuracy of your oven's temp setting.

BTW, undercooked brownies are typically moist and "chewy".
Thanks!

Anyone else?

TIA

How does one go about checking the accuracy of an oven?

Is the pan too big for the amount of batter?
Get an oven thermometer

Actually it's smaller than the one in the recipe.

I used a 9 X 13. The recipe calls for a 12 X 18 pan.

Ok thanks!
I can usually add a lot of feedback when it comes to cooking...

but baking I have no clue. On my list of things to conquer.
Could be a few things

Agree that they sound overcooked. As noted, you could have cooked them too long or your oven temp may be off.

Couple of other possibilities:

1) You mis-measured the ingredients or substituted something.
2) This calls for a very large pan not found in most home kitchens. If you used something different, or divided the batter into smaller pans or cut the recipe in half it may affect your results.

I looked at the recipe and

read the reviews. You are apparently the first person ever to fuck this up, lol. Many comments were that they were very moist and almost fudgey. None about too dry. I'd recheck the ingredients and directions, and yeah, sounds like they overbaked.

doesn't. Butter or oil will help to prevent the brownies from being too dry.

item that starts a liquid then turn to be dry and crumbly be under cooked? If you can't figure that out don't cook.
