To add to this they meet with every single player. At the East West shrine game I've seen multiple Giants scouts meet separately with the same player just minutes apart. Wouldn't look too much into it. At some point they'll meet with just about every player that plays in the East West Shrine, Senior Bowl & combine.

Sy you certainly know more about this arena than I do - but I was listening to NFL Sirius radio last night and they were talking about how NFL teams like the Sr. bowl interviews more than the interviews at the combine. Their reasoning was that by the time the players get to the combine, their agents have rehearsed interview questions so many times that the NFL guys don't really get a good idea on what the kid is about. Sounds kinda reasonable.
They also went onto say that Mike Mayock had conducted 75 interviews with Sr. bowl participants.
Of course, these guys were broadcasting from the Sr. bowl and were spouting off some ridiculous stuff - for example - Rick Neuheisel was all fired up saying that Joe Burrow should have participated - which is the dumbest thing I ever heard.
As he continues to grow and gain more experience, and get a solid OL in front that blocks plays up consistently, the game will slow down in front of him and he'll let it flow. He is frequently trying to do too much, that's all it is. Flow like water.
