NFT: Easter Menu

Hey,

What's everyone having for Easter? I've got some lamb chops and fingerling potatoes so far...

Any other suggestions?

with dauphine potatoes this year and the best fresh veg I can find.

Always have a pasta as well. One of lasagna, stuffed shells or manicotti(all homemade of course).

Cant see family which sucks, but going all in because why not.

creamed spinach
Glazed carrots
Easter Meat & cheese pie

My wife an I are in the same boat man, we have 4 girls of our own. We won't be doing a "traditional"Easter menu. I have some short ribs. Anyone have a good recipe?

I tried grilling some a while back but they ended up being too tough. I may ask my mom for her Sancocho (Hispanic stew) recipe.

If you have one, put the short ribs in a insta pot/pressure cooker. There are plenty of recopies on line just find one you like. It's super tender fall of the bone every time. Takes about 45 min

all rib Easter dinner this year. Beef and pork. Smoking them with post oak chips instead of my usual pecan. Serving those bad boys with red beans and rice and collard greens seasoned with a smoked turkey leg, onions and garlic

I typically make an Easter Pie (e.g. Pizza Rustica), and have started a related BBI thread for years.

Now my boys are out of the house, I don't need the fat bomb calories, and my wife doesn't eat it. Add the whole virus thing going on and I will likely pass this year. Saddens me actually.
My wife said we are doing the Thanksgiving meal.

damn, CR this one hit me. My oldest (twins) are seniors in high school, going to college next year, and I feel like this is the "last" of everything we'd do as a family and the virus is ruining it.

Last Easter as a family, last real vacation as a family (we had a trip to Europe leaving on 4/17 that is obviously canceled - to probably never be rescheduled), last summer vacation as a family, etc. besides the obvious quarantine stuff, this weighs on me, and your post made me think of it (besides the fact I'm always interested your menus).

Can't see my Mom who is in a rest home, which is terrible for her to not be with her children, grandchildren and great grandson.

We are doing a ham, potatoes, homemade mac and cheese, corn, rolls and another veggie.

P.s- I'm upgrading the seafood lasagna recipe. Will let you know if I find it worthy.

I like to marinate them for a bit w garlic salt pepper and a bit of oregano after lite rub gravy master on them first. Then Slow roast/braise them w a little liquid in the pan foe like 3-4 hours braise at 275. You can finish them off on the grill to get a quick char if you want that taste added one . Feel free to sub Worchestershire instead of gravy master. I make a Jus of gravy out of the drippings too

My dad passed in January and he used to love making that. God knows how it’s really spelled in Italian but it sounds like “pitz a gain” which was meat pie. Been a shitty hear. But we are here and need to remember the good. Just a bit rough this year. Enjoy your wife and your time as you can

I can barely recall that pronunciation from waaaaay back in the day. My grandmother and mom used the simple Easter Pie nomenclature for whatever reason.

I go with either a slow cooker or an instant pot for them.
Some red wine, garlic, diced tomatoes, beef broth, thyme, white pepper, salt, black pepper, diced onions, and some miso paste for the umami. I also add Mushrooms and Carrots to the dish. Make sure you sear the ribs prior to cooking

Do you mean scalloped potatoes?

I just found a recipe for pommes dauphine and it looks amazing. Are you making those?

Deal. If I can get all the ingredients, if not I'll substitute something. And just so you know I don't make my own crust (I'm an amateur and crust/bread scares me - I do make my own pizza dough for my pizza oven, but haven't tackled pie crust or actual bread yet).

And I'd love to see the updated seafood lasagna recipe, a family favorite at my house and a Christmas Eve tradition - one that I hope my kids take as their own.

Truth be told, while I used to make my own crust back in the day, I've been using deep dish frozen pie shells for years now. I take convenience/shortcuts where I can. Plus I hate baking.
If anyone needs a desert try this recipe...

Just in case you have trouble picking up deep dish pie shells at the supermarket, here's a super simple pie dough recipe. I saw a pair of old ladies on the food network make it about 17 years ago. I couldn't believe how easy it is, and have been using it ever since.

Pie Dough

1/2 lb. Unsalted Butter
2 cups All Purpose flour
1 Tbs. Sugar
1 tsp. Salt
1/4 cup Ice Cold Water

Cut the butter into small pieces, and put it into the bowl of a food processor. Add the flour, sugar, and salt. Pulse the whole thing with short 1-2 second pulses, until it looks almost like the texture of coarse cornmeal. Add the cold water, pulse it 2 or 3 more times, dump it out on to a table, and form it into a ball. After it all comes together, flatten it out, and put it in the fridge for about a half hour to rest. Then just roll it out, if it cracks, just pinch it back together.

Happy Easter Everyone. I have no idea what I'm cooking, but I know that it won't be anything too extravagant. Just me & the wife with the ever present absence of carbs on the table. I do have some Ramps, so maybe a couple of steaks, with a ramp chimichurri, we'll see.
Any last minute suggestions?
