NFT: Baby Back Ribs on PBC

Doing 2 racks from Aldi tomorrow. Both are in a 12% solution of salt/sodium/etc.

Anyone have any suggestions on when/if I should add any additional salt before hand? Salt an hour before and put on memphis dust just before smoking?
I don’t usually brine ribs in PBC

Let me know how they come out. I tend to get better results with St Louis and dry rub only.

But I put the dry rub on a day before and leave in the fridge. That Memphis dust is great stuff. I also use it on pork chops on the grill. Enjoy! My mouth is watering now

Yeah, rub it down with a lite coat of mustard, slap your dry rub on and let it sit overnight

get them out of the solution and dry brine them with the Memphis dust overnight and your good to go
