Only been fishing twice in my life. Think it’s something I’d like. Especially once I become a father. Was supposed to go on a week long fishing trip with some buddies this year but...you know.

I'd love to get back into scuba. I haven't done it in a long time, and now I don't have any gear anymore so it would be pretty expensive to restart, but I miss it. I've never done anything that gives me a feeling of peace like being below the waves, watching the fish dart in and out od the coral and the underwater plants gently swaying.
I'd love to go for a private pilot license, too, but that expense makes scuba look dirt cheap in comparison.

I would definitely love to live in Colorado at some point.

Oh...it's not even remotely a secret that when I retire and no longer need to have background investigations done, I would absolutely be a stoner. LEGALIZE POT!!!
I was all lined-up to buy my first boat 34 years ago and bought an engagement ring instead. No regrets on the engagement, but the ring didn't come with an upgraded motor and water skiing package...

Look for a "Hash House Harrier" group. These are the fun people -- drinkers with a running problem. Did this for several years in my travels with the Army all over the US and Europe. Very fond memories from what I'm able to remember...
I greatly expand my philanthropic endeavors, and also I would spend a lot more time and effort developing the landscape of our property, upgrading my tractor/loader, and also I would be doing wood smoking with my own trees, maybe even sap collecting and syrup making
With the intention of learning/teaching myself how to wrench on it. So far so good! I've performed a few basic repairs and upgrades solely on research and youtube videos.
I played guitar for a really long time. I started in junior high. Played in bands with friends, played out a bunch, had a lot of fun over all those years.
But, once I got into my late 20's, I just didn't have time for it anymore and slowly but surely, just totally stopped playing and honestly just sort of lost interest - which sucks, considering I spent about 15 years saving up for guitars and equipment and having many of those years revolve around playing.
I've always had an affinity for the drums and it always felt like rhythm and timing came naturally to me. But, they were expensive and when I was a kid, there's no way my parents were buying them for me. I didn't really even have anywhere to fit a drum set.
Being able to afford drums is no longer the problem - but again, they're not really practical. They take up a lot of space, are a bitch to move around, and then there's pissing off the neighbors, etc. On top of that, I just don't have the time. I know it's one of those things I'd splurge on and be like "okay, I'm gonna do this" and I'd just never have time for it and they'd start collecting dust within months.
and before COVID, I used to love to drive around and take photos. Living in Hudson County, there's so many great places to find to take pictures. If I had the time, I'd delve more into that and pick up where I left off before the kids were born and before COVID hit.
I could see way more stars from my back porch in Queens, back when, than I can see from my 1/2 acre up here,10 miles north of Albany. The nights up here are almost always overcast.
I'd increase my coin and currency collection. Have always loved collecting US coins and large US currency but it quickly gets to be an expensive hobby and gives you pause when you're buying stuff.

You gotta like waking up early,which I do, so long as I push myself into bed before 12 midnight. The best time to spray protect your grapes against pest and fungal diseases is the hour or more before dawn, when the wind tends to be at it's quietest.
Especially spraying any type of sulfur, which 1) qualifies as an "Organic" and "sustainable" cultural practice and 2) can cause both leaves and nascent fruit to burn if done in direct sunlight.
So you get on your tractor before dawn and are spraying either before sun up or very shortly after.
It's a great time to see wildlife, too. Lots of mammals like to eat grapes in an unattended vineyard: deer, fox, porcupine, nutria and birds too. Set up some hawks' perches to keep the more common bird species away...
Furniture restoration.
If I really didn't have to worry about time or money, I might get into restoring and flipping homes.
I already do genealogy, but I'd take it to another level, traveling to ancestral homes, etc.

Probably a 36 foot twin Diesel express model with a couple cabins and a galley.
