NFT: Smoking Turkey Today

on my PBC. 12.5 lb bird. Planned on 4 hours. After 1.5 already at 145 degrees.

What do I do if it finished 3 hours before dinner? Wrap and put in cold oven?

Put in a cooler. Put old towels over the turkey to fill in the space in the cooler.

Bark is on point...using an apple/pecan mix...foiled the wings and drums to protect against burning...looking forward to devouring that bitch...

We were shocked at how quickly they were done. Trust your temperature gauges.
14 pounder went on at 11:00

Stuffed cavity with onions and apples. Dry rub of garlic powder, salt/pepper, and onion powder. Tucked several slivers of fresh garlic in some small slits into the breast. Cherry and white oak wood chunks providing the smoke.

Wife making traditional Jewish brisket with onions and sauce, latkes, etc.

Hofbrau Oktoberfest on tap.

a 25 pound turkey and it only took about 3.5 hours.

I use the alton brown method, so it was brined and initially cooked at high temp. One of the best tasting turkeys I've had.

It turned into a perfect grilling day in NY Metro

it started clearing at 11:30 and I was all over that -- DC Gmen -- yes the Turkey will cook faster depending on how hot the PBC gets -- you must trust your thermometer!!!
