Engram's salary is actually not guaranteed until March 2021.

I thought that only bonus money accelerated and was payable by the Team that traded the player and the new Team paid any other money.
I thought the option was only guaranteed against injury.

Consequently, his 2021 salary was only guaranteed against injury through 2020; the full guarantee kicks in next month, at the start of the 2021 league year. So there is a still a brief window in which he can be cut with no dead money.

Starting with the class of 2018, Year 5 salaries are fully guaranteed from the exercise of the option. The formula for those salaries has also changed, with more emphasis on performance and less on draft position.

The first change complicates the Saquon Barkley decision. The way I read it, the second change doesn’t affect him materially, but that’s a coincidence: by making the Pro Bowl on the first ballot in his rookie year, Barkley achieved roughly the same Year 5 salary level his draft position would have merited under the old system.
