No, I don't mean you, smartass. I mean honey from bees. I will assume that like me, many of you have had a bottle of honey sitting around in the cupboard until it got all grainy, looked like shit, and you threw it out. Fact is, that maybe more than anything else, honey is a food that never goes bad. Here's how you can restore it:

According to Goodlifeeats:

"Decrystalize Honey By Soaking in Water
My favorite way to decrystallize honey is to boil water in my tea kettle, then place the jar or container of honey in a large bowl or pot and pour the hot water around it. Let it soak for several minutes until the honey has softened and liquified itself again.

How long it needs to soak will depend on how crystallized it is, how cold it has been stored at, and the quantity of honey. Naturally, a larger container will take longer than a small amount.

If needed, replenish with additional hot water if it is taking a long time.

2. Decrystalize Honey in the Microwave
Another way to decrystallize honey is to place the honey in a microwave-safe container, with the lid removed. Then, microwave the honey over medium power for 30 seconds at a time, stirring in between microwaving sessions. Continue until it has been decrystallized. Be careful not to scorch or boil the honey.
What I don’t prefer about this method, is that you can’t really do this with crystalized honey that comes in a plastic bottle. The microwave can warp the plastic. I tried this before and my bottle definitely came out shrunken and misshapen, so you really need to remove the honey and put it in a glass or ceramic container. But, that can be kind of difficult when the honey is stuck in its solid state. Unless the container has a wide enough mouth to scoop the honey out and transfer it to another bowl or jar that is microwave safe!"

Otoh, as I learned this year but never new (New Englander that I am), you have to refrigerate or freeze maple syrup because it does grow stuff.

Yes, this is true. It has virtually no water in it and anti microbial elements that allows it to survive for a long time if stored in certain ways.

I consume a lot of it in my tea every day. It doesn't have time to get crystallized or whatever. Tastes great and helps with allergies to the local pollens. Comes from an apiary about 7 or 8 miles away.

I finally got fed up with all my brown sugar bags becoming credible substitutes for concrete after a few months, so I researched a solution. They sell these ceramic things you soak in water and place in your brown sugar container, and they work miracles.

Put brown sugar clumps in a bowl, cover with damp paper towel. Microwave 20 seconds at a time, mushing down anything that starts to soften. It should all be soft in a few minutes. Also, just Google "brown sugar softener stone"

Still salvageable.....Pour into a pot, heat on the stove until nearly boiling, add a peeled potato, simmer and skim off any crud floating on top, Discard potato. if necessary, pour through cheesecloth. May seem like a lot of work, but real maple syrup is $$$$$$

Thanks! Vters are good to have here. (Mom was actually once a Vter and even worked at a place selling maple syrup, but she had no useful advice for me).

I am a Maple Syrup Producer. Maple Syrup can be kept indefinitely in the container without refrigeration as long as the Original Seal has not been broken. Yes...once opened it must be refrigerated but until that time it can sit on the shelf with no problems.

I just 'uncrystallized' about a qt. of honey that was on the back of the storage rack today. It was right next to an opened bottle of Maple Syrup, that after reading Buzzards notes above on syrup, will have to be checked for quality tomorrow! I fear the worst, as I have another open bottle that people have been using that is right in the front of the rack....
