I started to review past drafts looking for the last time a defensive player was not picked in the Top 10. Going back to 2000, unless I missed one, I only found 1 year (2012) when a defensive player was not picked in the Top 5. Most years, more than 1 defender was picked in the Top 5.
With all the QBs and WRs pushed up to the top of the draft, the Giants may come away with a future defensive star.

Dallas is the team that would take him. But they may trade up for Pitts. Or someone else may trade into their spot to get a QB.
The fact that there's only one or two defensive prospects that are even in the conversation for top 10 is the story - how the draft unfolds is almost irrelevant.
Agreed. There are two players that based on talent would be in the top 10 but likely will not be. Parsons (character concerns) and Phillips (concussions).
3 Defensive players in Top 15 (The 2 listed above plus Tim Lewis, future Giants Defensive Coordinator, to Packers at 11)
Golladay and Rudolph, assuming he is healthy, are not enough. He needs another receiver and another stud lineman. Rounds one and two absolutely have to be offense.
Besides, I think we did enough this off-season to bolster the defense. Plus, Xavier McKinney hopefully will be available this coming season. Don’t select any defensive players till round 3.
I think in a general sense this is true, but I don't think that's necessarily the reason for this. Devin White was the #5 overall pick in the 2019 draft, and if they were to re-do that draft today he'd go #3 overall (behind Murray and Bosa). Meanwhile-- I've seen most draft experts have Parsons this year rated even higher than White was.
I also think Surtain has long been expected to be a top 5 pick (going back to his freshman year) and now suddenly he's more likely going somewhere in the 7-12 range.
I think this is truly due to the fact there are 5 top 10 QBs in this draft, and some electrifying eye-popping offensive weapons. I mean, the fact that Devonta Smith can have the type of year he had last year and he may be the 4th receiver off the board (I'm including Pitts) goes to show the level of receiving talent in this draft.
So, yes I agree the defensive talent OVERALL in this draft is not as strong, but I think the point of the OP is valid: we could very well get a top 5 -level defensive talent at #11 thanks to all the top 10 QB prospects and fact there are multiple receivers in this draft who could come in and completely change an offensive scheme.
Also the fact there isn't a clear dominant force on the DL is part of this too, as dominant DL go higher. (I should say: DL who APPEAR to be dominant... Quinnen Williams was expected to be like the best interior DL since Donald and how did that turn out.)
At 4 last year we took an OT who Sy had rated 83. The best guy on one teams board could be #10 on another teams board.
Regardless, we need to come out with 2 solid starters from this draft. the team still has more needs on O than D so hopefully we go O for me. If either Sewell or Slater is there that would be 1st choice for me. D players seem to be easier to find in FA than O players.
In terms of actual pass rush ability I think Phillips is the best in the class. The problem is that injury history is beyond red flag.
Even if he isn’t who cares. Look back at he OBJ draft.
The Best players often get pushed down for QBs. This year more so it looks like.

Being a top-5 pick a few years out and then landing in the top-10 or top-15 is just a function of the board taking shape over time, IMO.
At one point, Jadeveon Clowney was so firmly entrenched as the presumptive #1 overall pick that he considered skipping his final collegiate season. He played. He went #6 overall, IIRC.
Where a guy is expected to go as a freshman is a silly exercise, IMO. Who's bothering to scout Northwestern's underclassman OL? Or North Dakota State's backup QB? Or the #4 WR at Alabama?
The draft class is stacked up now based on their merit, and - to your point - some positional bias that is pushing QBs up the board. But even if the QBs were out of the mix, you might see a few more OL enter the top tier (Vera-Tucker, Darrisaw), and maybe one or two more corners. This still is a much more offensive-heavy draft class at the top, even ignoring the QBs entirely.

The key is going to be what the Dolphins do in that spot and if Falcons draft a QB. That isn't outside of realm of possibility.
