To me Sleepless was a pale rehash of the much better When Harry Met Sally adding the big vs small bookseller background stuff that isn’t tres romantic.
I’ll add Daphne Zuniga and John Cusack in The Sure Thing.
But Bogie and Bacall had chemistry and heat, so they get my nod.
One pair that hasn't yet been mentioned is Fred McMurray and Barbara Stanwyck in Double Indemnity. Then again, at the end they both wanted to kill one another. But upon further reflection, that love/hate dynamic describes many intense romantic relationships.

Not to be a know-it-all but that was Ingrid Bergman, not Bacall, in Casablanca but I agree with your point. Also, Robert Redford with Barbra Streisand in The Way We Were and Robert Redford and Faye Dunaway in Three Days of the Condor also come to mind for a favorite couple with great chemistry.

Interestingly, both are pretty much on opposite ends of the political spectrum these days but IMV Coming Home was a great movie and they were awesome together in that movie.

I think you're confusing Sleepless and You've got Mail. Both had Hanks and Ryan, but there was no book seller story in sleepless.
I remember it being called "Harry Met Sally" until ... now.
