NFT: Father's Day- What are you cooking?

It's 111 degrees here today, so instead of grilling, I'm doing spareribs in the oven. Trying just salt and pepper and then glazing under the broiler with some honey and gochujang. Got some corn at Safeway for a penny an ear to go with it. Going Mexican tomorrow with arroz con pollo and an app of chunky guac, a family favorite.
Don't forget- it's Moving Day at the Open, but

I cook almost every day. My family couldn't give a shit if I cooked tomorrow, too, lol. And I prefer to do it.

Not so with fattier cuts, but I always sous vide tenderloin, dry, salt and pepper, a splash of oil and sear in a cast iron pan. If I didn't have sous vide, I'd sear and then cook in oven or indirect on grill to temp

I'm searing in the cast iron and then throwing in the oven. Seems easy and I don't have sous vide.

made a horse radish sauce, some dinner rolls and we will have some kind of vegetables (not my dept)

Making my own burgers using 80/20, will use a couple seasonings, some chopped up bacon, shredded cheddar and throwing some cherry peppers in a couple for myself and my father, Hoffman hot dogs (both German and snappy), smoked corn, 2 racks of baby back ribs, bacon wrapped armadillo eggs and possibly some bacon wrapped asparagus.

First up, I'm throwing a 3 bone plate of short ribs on the smoker. Figuring 8-9 hours at 225, also going to throw on a duck that I split, and partially deboned. I'm thinking 3 -4 hours, then a quick dance on the grill to crisp up the skin. For the grill, I've got three 22 oz. ribeye steaks, and a NY Strip for the wife. Sides are roast red peppers, marinated in evoo & garlic, with Buratta cheese, grilled asparagus, and a gratin of kohlrabi with heavy cream & Parmesan.Keeping to the low carb thing. For drinks, I've got Jack Daniels Barrel Proof, which is an amazing sipper, can't recommend it enough if that's your sort of thing.
There are some chicken legs marinating in the fridge.

If it's nice outside tomorrow, I'll probably grill them. If the weather is shitty, I'll have the wife do it.

Wow, with all that food, you could open a restaurant. And not a bad carb in sight. Impressive. And, you know, you could start the thread yourself, sport :)

Doing a big old fat picnic. Rough going after the islanders game too late too much bourbon.

I set up everything in my backyard before the game, a monsoon came through and fucked up my setup.

I'm going to have a screwdriver get the picnic on and hopefully sleep. Then pulled pork tacos later then nap, burbon, pulled pork nachos,nap.

Schweitzer & Sons burgers and hot dogs from the Swiss Pork Store nearby. Some German Potato Salad. Maybe roast some beets. Sit outside and watch the U.S. Open with a cigar and a glass or two of Yellow Spot.

This morning we are heading out for big breakfast to one of the kids favorite spots, but assume I will get stuck with check as usual!

Tonight I will be grilling a few beautiful NY Strip steaks and the girls are putting together a nice little Caprese salad and some hashbrowns as a side. Haven't discussed dessert...yet.

And somewhere in there need to read Sunday paper, go for a run and also watch the back nine of the US Open. I am pulling for Xander Shauffele to come up from behind and catch all those major winners in front of him...

In the smoker. Using a recipe I got on here from Sec103!

Should take about 6 - 7 hours. My neighbor had some ribs he’s smoking’. We’re having dueling smokers.

Going to the brewery in a little while to pick up a growler of their IPA. Special batch they ‘cooked’ up go for Fathers Day weekend.

Problem have to keep an eye to the sky cause just north of us in Ocala there are lots of thunder storms. Will have to pull out the canopy!

Made a little compound butter mix with garlic and thyme to melt on steaks as they rested...it’s always money.

Congrats to Jon Rahm...nice back nine! Glad to see he finally got vaccinated, chucklehead....

Cooked just a little beyond what I wanted, but not bad for my first time. Need to pay more attention to temp vs time. My recipe said 30 min for med rare/medium. This is closer to medium well. Couldn't have been easier (even if I cooked to the right tem).

Still delicious and it needed nothing but salt and pepper.

yeah, temp is always a better indicator than time. Too many variables regarding time
