Grey Pilgrim pushed me into an early release date on this, lol. My 3 are:
1- Onion- you pretty much can't make anything with a beef or chicken stock base without onions. Plus, caramelized or onion rings, raw in salad or on burgers.
2- Tomato- there would be no red sauce/gravy without it. Plus raw in salads or on sandwiches, roasted on appetizers, soup, and of course, in ketchup
3- Garlic- maybe nothing, other than bacon, makes food taste better. In almost every recipe I use from someone, I double the garlic.
I'm pretty sure I know the #1 choice that I left out :)
Onion, Tomato, Potato

ok, I'll change it to top 3 veggies or faux veggies. But is a hot dog a sandwich?

if that's all you can come up with! :-D

Does it have ketchup?
Sugar snap pea season is done but that's a vegetable delicious without even cooking it.
Fresh corn is in season now too. As I think about it - I think fresh corn on the cob is #1.
I agree that onions and garlic are essential cooking elements but they accompany other things, I wouldn't rate them in the top 3 just on their own.
Shoprite usually has fresh mozz right next to the tomatoes. Does that make mozz a vegetable (fruit)?
Collards Greens
Asparagus
Brussels Sprouts

Just got some amazing summer squash from our CSA farmers, been so good on the grill. This is a good list and hard to argue against. Love fresh corn in the summer, grilled, boiled, in salsa's, street corn style, can't beat it.
I love Brussel sprouts too, but not sure it cracks top 3. Potatoes for sure have to be in it, Tomatoes are technically fruit, and I love tomatoes, but if it comes to potatoes vs tomatoes, Potatoes win for me (although its tough cal)
I love almost every vegetable there is so this is tough. I'd probably go:
Broccoli
Peppers
Carrots
The big omission is Onion which I also love but it can't really be a standalone food like the other 2. But its the #1 to add to a dish by far.
Burnt broccoli
Brussel sprouts
And hotdog isn't a sandwich, a sandwich has two seperate slices of bread. So unless you eat a hotdog like a fucking psychopath, it isn't a sandwich.
Cauliflower
Brussel Sprouts
No doubt for cooking onions and garlic are mainstays.
Eggplant
Broccolini
Carrots (Cut lengthwise into 1/4"-thick planks. Olive oil, salt and pepper, grill until they have some char on them. Really good.)
honorable mention: asparagus and shishito peppers (the peppers work great caveman style.)
Everyone I know these days is like:
"Omg tomatoes cause inflammation and they have CARBS" *gasp*
Yet somehow McDonald's still sells 65 million hamburgers a day.
I try to eat healthy most if the time but I'm not going to worry about tomatoes.

That basically rules out everything you'd get at Subway/Jimmy Johns/Favorite Sub Shop.

people conflate that. Does anyone conflate rice for a vegetable?

Right. I agree with that. Subs, hoagies, whatever you want to call them are a different category.
Also...
Peppers are a fruit
Eggplants are a fruit
Zucchini are a fruit
Cucumbers are a fruit
Green beans are a fruit
Peas are a fruit
Avocados are a fruit
Corn is a fruit
Okra are a fruit
Winter squash (eg: Butternut) are a fruit
They are also all vegetables. Let’s not get our panties in a wad over technical botanical terms.
Well then it's a boring discussion because any answer that doesn't have Onions and Garlic is just wrong or the person doesn't cook. Bill shut the door there in the OP.
Burnt broccoli
Brussel sprouts
Have you tried charred, which I assume is the same as burnt, brussel sprouts. They're excellent also. Spinach, burnt, probably not so much.
Get off of my lawn

they would be sold in the fruit aisle. Just like tomatillos, which are supposedly berries. Case closed :)

I don't know. Maybe it makes tomatoes a cheese.

Onions are actually fairly high in carbs, but IDGAF
yeah, someone said something like "I get my vegetables by feeding them to cow and pigs"
Collards Greens
Asparagus
Brussels Sprouts
I've never eaten collard or mustard greens. Have you had mustard?

So, if I put some mustard on a slice of bread, put a couple of slices or salami on it, and fold it in half and eat it, it's not a sandwich?

vegetable is a cook's term
fruit is the botanical description, being produced after fertilization of the flower and containing the seeds of the plant
onions are a stem botanically
potatoes are a tuber (swollen root) botanically
just sayin : )

Thanks you, Gidie. Since I declare this to be a cooking thread, we will go with the cook's definition. :)
2. Potato
3. Garlic

I saw something about vegan beef (some kind of fake stuff) recently, but my first thought was that all beef is vegan because they are grain fed or grass fed.

You named about 1.5 vegetables.

Those all qualify as vegetables on this thread. As does ketchup.

Yep, mustard greens are a bit stronger, peppery flavor. I enjoy collards much more although the manner in which they are prepared (at least in South) probably ruins a good bit of the health benefits.
Nevertheless, they are fabulous if done right and matched with grilled fish or pork dishes...
Also legally a vegetable (here in the U.S.):
“Botanically speaking, tomatoes are the fruit of a vine, just as are cucumbers, squashes, beans, and peas. But in the common language of the people, whether sellers or consumers of provisions, all these are vegetables which are grown in kitchen gardens, and which, whether eaten cooked or raw, are, like potatoes, carrots, parsnips, turnips, beets, cauliflower, cabbage, celery, and lettuce, usually served at dinner in, with, or after the soup, fish, or meats which constitute the principal part of the repast, and not, like fruits generally, as dessert.”
In the end, after Nix & Co.’s many days in court, a decision was reached: the tomato is a vegetable, and if you import them, you have to pay the tax. Legally, the tomato remains a vegetable in the United States to this very day.

I guess you expected me to post that thread? OK, I did
Special mention to kale.
Special mention to kale.
I've only had cumquats as an Asian dessert. Haven't had rutabaga. Like parsnips a lot, had twice last week
