NFT: Looking for a great easy sweet potato recipe

I have to bring the sweet potatoes. Come at me with your best.

I don't think I want marshmallows. But I'll consider anything.

Needs to be easy.
Haven’t tried this, but looks killer.

Just boil them until fork tender. In frying pan with lots of butter add brown sugar. Add in the sweet potatoes and cook them in pan for a bit. Use some of the boiled water to keep it from getting to thick. A pinch of salt will be a nice touch.

This is super easy and IMO a lot better than marshmallows.

Ingredients:
Makes 4 to 6 Servings

3 pounds sweet potatoes, peeled, cut into 1½-inch pieces
1/4 cup olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Preparation:
Step 1
Preheat oven to 450°. Toss potatoes, oil, salt, and pepper on a rimmed baking sheet.

Step 2
Roast, tossing occasionally, until tender and browned, 35–45 minutes.

Jimmy.. is that a crowd pleaser?
Not sure I have ever gotten any complaints (out loud). Lots of people

believe that you have to dress up sweet potatoes in a dish with sugars like cinnamon, brown sugar or marshmellows and that is just gross to me.

I keep it easy and let natural taste of potatoes come thru. Besides that are sweet enough on their own...

I'm thinking of doing yours but maybe just add a tablespoon or two of maple syrup.
