Or, do something similar to what Adam suggested. Here's an address for Ina's Roasted beets, with raspberry vinegar. You could probably substitute balsamic or red wine vinegar.

I ordered "beets + sweets" at a local fried chicken / brewery here in Denver and have tried to replicate it on a few occasions. Cannot even give you a recipe, but what turned out was pretty good! (I'm sure Mr. Bill in UT can take this to a new height!)
Fresh beets + sweet potatoes (cube into 2" pieces, shake in bag w/ olive oil, salt, pepper, garlic salt) - roast in oven until starting to crisp.
Once out of the oven, mix in goat cheese crumbles, parsley and walnuts. Serve over a bed of arugula. Awesome.
