The wife and I went back in April. Great town. Check out One World Brewing, they have a really cool basement level/off the beaten path dungeon type brewery. Wicked Weed and Funkatorium are cool as well.
Also - not sure what’s playing there but Orange Peel is one of the cooler live music venues I’ve been to. It’s like a really wide old manufacturing plant. We saw Pinegrove there but it’s worth it depending on who’s playing.

+1 for Wicked Weed. If you like sour ales, their Black Angel is really good.
Also, Early Girl Eatery has amazing brunch and fried chicken.
Foodie town and lots of craft beer joints to visit.
take the Comedy tour of the city.
You'll still see the sights, but the tour guides are truly hilarious.
Also phone ahead for a tour of the New Sierra Nevada Brewery nearby, it is very visitor friendly and the cafe has tolerable snack food/sandwiches and great beer tasting.
Sierra Nevada has a brewery in Mills River, a short drive from downtown Asheville. Very good ambience & some damn good beer. My first beer love was Sierra Nevada Pale Ale.
on Biltmore just below College St. Tapas style restaurant that is jus fantastic, the best meal I've had in some time. White Duck Taco is across the street and good for lunch. Biscuit Head is great for breakfast, but I wouldn't go to the one nearest downtown, the one on Haywood Rd in W Asheville was awesome. So many breweries, it's hard to pick just one, but Green Man was nearest to our AirBNB, and it was great.
It's a little cheesy, but the LaZoom comedy bus tour takes an often funny spin around the city.
RE: The Grove Park Inn is one of the best resorts I have ever done....
if you have not setup accommodations yet you can’t go wrong there.
Dining, if you are a BBQ fan Buxton Hall by Elliot Moss does whole hog nose to tail cooking. A casual place with really good food.
Cúrate, is a tapas place just won a James Beard award and the food is very good.
You are hard pressed not to find a great brewery in Ashville I believe it is in the top 3 cities in the country for microbrews.
Have fun it’s a beautiful area and congratulations on your anniversary.
Biltmore if you or your wife are big Christmas holiday fans

The hot air ballooning is a good excursion as noted above.
Have fun...
