I'm always looking for good recipes for leftover chicken. Mrs. in UT made chicken soup for Rosh Hoshana, and is making it again for Kol Nidre. Usually, I just use the leftover chicken to make chicken salad. Tonight, I'm using last weeks' soup chicken to make one of my favorite dishes, Simply Sour Cream Chicken Enchiladas. This could also be made from leftover Thanksgiving turkey. It's cooking as I'm typing. It's easy and delicious. I've linked the recipe. I use Costco uncooked tortillas, which I prime in a cast iron pan. I also use Costco canned green chilies, which come in 7 oz cans, so I use 2, 14oz, instead of the 8 in the recipe. I also go over on the cheese, using Jack cheese. Have I ever led you astray, lol?

I like buffalo chicken dip, but my guests don't really go for it. Same thing for me with artichoke dip

Same. It's more a me thing. But it's nice binge snack.
When softened sprinkle with flour and add some nroth to make a gravy.
Fold in chicken into csserole dish .
Top with mashed potatoes or mashed cauliflower.
Bake until hot and bubbly
