NFT: What are you eating this weekend?

I've gotta cheat a little, cause I'm going out to an apps only function of Saturday and planning on leftovers on Sunday.
So yesterday I made my meatloaf version. I didn't want to stick it on the tail end of my other thread, but I think it's pretty good and it involves almost no prep work and just pantry items.

Bill's Quick Meatloaf

Ingredients
2 pounds ground beef
2 eggs
1 cup bread or saltine (20) crumbs soaked in milk
1/4 cup chopped dried onion
1 Tbs garlic powder
1 Tbs dijon mustard
1 Tbs worsty sauce
1/4 cup bbq sauce
1 Tbs S&P
ketchup
Directions
Mix all ingredients except ketchup. Form loaf on parchment lined baking pan or in loaf pan. Cover top with ketchup. Bake at 350 until you reach 165 degrees, about an hour.

Tonight, I had friends over and made hummus with veggies, and shrimp fideus- shrimp over a base of broken up, fried angel hair pasta.
Tomorrow, Friday, I'm making a dish I've done before- Pernil, a roasted pork butt with a citrus marinade, along with rice with pigeon peas.

going to be cold here, real comfort food weather. She uses the meatball mix blend veal, pork and beef. Adds softened carrots, celery and onions too. Not sure about tonight and Sunday yet.

Cornbread waffles with spicy honey fried chicken, spicy maple syrup and braised mustard & collard greens. Having a few couples over and all are spicy food fanatics.


Saturday, I'm making oxtail Ossobuco with a parmesan orzo risotto, and green peas with pancetta.


Sunday for the game we have a bunch of the crew coming before the holidays start,
Ordering Detroit style pizza a few different kinds
I am making Korean style sticky chicken wings
And spicy shishito pepper beef/pork slider’s with sriracha aioli. and a ginger, garlic, soy glaze to baste the burgers during cooking.

Hopefully my wife...

hey, Victor, let's hear it for meatloaf :) My regular meatloaf has sauteed onion and beef and pork. My mom used to make one with a can of vegetable soup in it-we called it Surprise Meatloaf. The first time Mrs.in UT had it, she cut it and a lima bean fell out, it was like WTH?

LOL that's funny. My mom would use lipton onion soup mix in it. not her best thing. and Mrs. In CTs mom did the same awful thing! SO neither of us had a good meatloaf until we were together and starting coooking

My mother and my wife both used onion soup mix to make it. That style with brown gravy is my favorite. I won't eat meatloaf with ketchup on it.

Salmon with garlic butter tonight. Steamed broccoli and a baked spud to go with it.

A dark, coarse kielbasa from the Polish deli grilled and eaten on steak rolls for the tailgate Sunday. I figure that steak on a plate will get cold quick in the expected weather. Winter beers are out now. Brooklyn Black Chocolate Stout, Mad Elf, plus whatever I pull from the fridge will be in the cooler. Always an obligatory bag of pork rinds.

Hey, Scott. We were just talking with friends yesterday about different things made as waffles. I had seen, but haven't made, falafel. I'm assuming cornbread works well. I've got osso buco on the calendar for the day before Thanksgiving. It's been a while. Enjoy the game, sounds like a great spread

I've got a couple of meatloaf toppings that I make, but this is my easy one, no cooking. I like it- I figure if I make a meatloaf sandwich I'd put ketchup on it. Enjoy the tailgate.

Hey, Bill. Unfortunately, the ossobuco I must delay until next week.

After my last post in my Criminal minds thread my wife crushed her thumb in her car door and we have been in the ER waiting room since. I’m hopeful she will be ok, but she did a real number on it.

Another waffle idea that I have done before and works great this time of year is stuffing waffles. I always make extra stuffing on turkey day for leftovers and add a whipped egg to it for a binder and make waffles, add some leftover turkey, gravy, hot sauce and a fried egg I know it’s odd, but it works and tastes great. For me anything other than turkey salad or sandwiches with leftovers is a good thing.

Wow, sorry to hear that Scott. I hope she's ok soon. My wife almost took off part of her finger in a car door when she was a kid.

First off - Scott, I hope all is well with your wife.
As for cooking, we've got Thanksgiving catering happening this week at 9 am Monday morning. Sunday is a day off, after an early morning trip to the Restaurant Depot. I'm wanting pizza tomorrow, but there are too many T-Day carbs on the horizon (pecan pie & stuffing) so I think I will grab something to throw on the pellet grill. Maybe a pork shoulder, a bottom round roast beef, or a rack of pork chops. Whatever I cook, I will pair it up with some beautiful local cauliflower that is going to get roasted with just evoo, salt & pepper. Happy Thanksgiving!

Thankfully she didn’t lose her thumb. She did fracture it above the knuckle and get 9 stitches, but it could have been much worse.

I always leave the light on for you, Drew. Sounds like an early start for Thanksgiving, make a killing. I'm sure whatever you throw on the grill will turn out great.

Mrs.. in UT broke a finger (bone) through the nail. She got stitched and splinted. The nail has never grown back right, but no other bad effects.
