Mrs. in UT is out with the ladies tonight, I just heated up some leftovers out of the freezer.
Tomorrow, I have a pre-arranged dinner at my house, so I've gotta record the Giants' game and watch after. That sucks. But I'm making a slow roasted Korean pork shoulder- Momofuku So Ssam. A ginger-scallion sauce and a chile sauce. Korean white rice and blistered green beans with sesame and Szechuan peppercorns.
Sunday, the dtr's family is coming over and to keep the boys happy, I'm doing wings/ribs/chicken legs with Buffalo and Alabama white sauces. For the ladies, a roasted eggplant/red peppers spread, and flourless peanut butter cookies for the gluten free.
Anyone planning a big spread for the game?

Tomorrow I'm on my own and busy during the day - will probably do takeout linguini with clams from the local Italian place in the lead to the game.
Had simple pan roasted salmon with olive oil, salt. pepper and lemon, sauteed spinach and milanese risotto from a package (Alessi is the brand. They're pretty good in a pinch).
I found a duck yesterday, but I froze it. Will have next week. I want to enjoy that meal an linger. So Mrs. in CT is making her rather excellent veal stew for dinner tonight with peas, mushrooms, carrots, onions and diced tomato over buttered noodles. nice easy 1 plate meal. and a tossed salad. We'll eat at half time of the Chiefs game.
Wife bought an eggplant so she will probably make either a parmagiana or just plain fried tomorrow

Everything sounds great, Victor. Mrs. in UT loves eggplant so I have a bunch of recipes if you ever want to make something a little different. Have you decided how you'll do the duck?

Today I'm going to make a chipotle dry rub for Wings, and St Louis Ribs, cooking it all on the pellet grill to roast them, not smoke. Side will be Napa Cabbage Slaw, and some form of dipping sauce. Maybe Alabama White (thanks for the idea Bill)
Tonight I'm invited to a late night Chinese New Year Party. Party starts at 10, so I'll be a little late, and go after the game. I'm pretty sure there will be dumplings, and a lot of whiskey going around.
Tomorrow I'm braising a Beef Chuck Roast. Lot's of onions, and a little bit of beer. I will make a sauce out of some of the braising jus, cream & horseradish. I picked up some fresh horseradish from a local Polish place. It is really hot, and I think it will go great with the beef. Not sure what I will serve with it, but everything above, except for the dumplings will be low carb.

Widowed after 22 years but she knew if there was a giants playoff game plans would be changed but in all fairness the few times we changed plans because of the giants games she made out well. She was a hell of a negotiator lol. Anything from something around the house she wanted all the way to a 5 day cruise so yeah I think secretly she would make plans for us and would want me to want to change them lol good times. Jokes on her though I would of done most of it anyways for her
The carrots themselves were whole young carrots, not the processed baby carrots in the bag at the grocery store. Very fresh and natural. As to how they were cooked, I couldn't figure it out but they were delicious. Yes, roasted but I'm not sure what was on them. One of the few times I felt like walking into the kitchen and asking the chef how he or she did it.

Love butter chicken. I've gotta get back to cauli rice. Do you buy pre-riced or make your own? Enjoy your party- mu theme tonight is Asian, but it was just a coincidence. So you're not really looking to make a stew with the chuck, I guess. No carrots, etc?

So sorry about your wife. In the old days, before you could record TV, this story may have gone another way, but I'm ok with being a couple of hours behind. I can skip the commercials and halftime.

I have 2 carrot recipes that I love, one with balsamic and the other with turmeric honey.
I like what I call country style meatloaf (not sure if it's really called that). I first tried what I mean in Northern Virginia at a place called the Amish Market (no longer there) where they sold really nice wood furniture, hand made clothing and other "Amish" goods like candles, etc., and they had a small restaurant that sold open faced turkey, roast beef, and meatloaf lunches with gravy, green beans, mashed potatoes etc.
All the recipes I see online have ketchup glaze on the top, so I may make the meatloaf and just not use the glaze and make some beef gravy for it.

If you don't like ketchup, beef gravy sounds like a good way to go. You could also do a mushroom gravy or even just bbq sauce glaze, tho that would contain some ketchup.

Those sound like some great combinations. Someone mentioned bar pizza here last week. Coincidentally, they did bar pizza on Cook's Country yesterday and it looked pretty good. I think I'll give it a try my next pizza night.
