For the Senior Bowl I thought I'd try a mock draft that only selected players in the Senior Bowl. I used the simulator on nflmockdraftdatabase.com. The grades are generated by the simuator. If you want to give it a try here is a list of the rosters
25 O'Cyrus Torrence IOL | Florida A
57 Derick Hall EDGE | Auburn B+
89 J.L. Skinner S | Boise State A
100 Riley Moss CB | Iowa A
128 Daiyan Henley LB | Washington State A+
162 Jayden Reed WR | Michigan State A+
208 Davis Allen TE | Clemson A+
218 Nick Saldiveri OT | Old Dominion A+
242 Tyler Lacy DL | Oklahoma State A+
245 Camerun Peoples RB | Appalachian State A+
255 Jake Haener QB | Fresno State A+

But what do I know? Seriously.
I’m lousy at evaluating, and Sy’56 may give him a 68 score for all I know; but, getting him and giving him a year of NFL at G gives them a mobile body, beefs up the middle and right, and gives them a year to evaluate EN. If Torrance is flexible, gives them a possible back up to AT, and if not, he’s still a big body for that side, helping set up a nice ground game while taking pressure of a pass game while building and developing that part also.
All things being equal talent wise, yes. What sense does it make to take a player of equal talent at a position of lesser need compared to a player in a position where there is a greater need. If he's a level better talent wise, that's different.
Kelce at center
People on here are talking up Torrence because at this time of year fans don't really know enough prospects yet so the same names just regurgitated and spit out at NYG positions of need.
And this has nothing to do with Evan Neal, and him not being great yet after what...14 games?
