My estimation - NYG will be picking from these 8 guys and this is how I see it shaking out:
1. WR Jaxon Smith-Njigba - unlikely, borderline impossible that he'll be there. If he is there around pick 20, watch for a trade up
2. WR Zay Flowers - possibly there, may trade up if he's available in the low 20s, but may not want to move up 5-6 picks to get him
3. WR Quetnin Johnston - I don't believe NYG would have crazy interest in him, if he's there at 25 they would possibly consider, but not sure they love the physical makeup for this offense, he might have trouble getting open in the pros
4. CB Cam Smith - could fall due to some character concerns, but the dinner with NYG brass would appear that they have real interest - I believe he would warrant serious consideration if still available at 25
5. CB Joey Porter Jr. - unlikely to be there but would likely be the selection if he is, even over WR perhaps
6. Edge Lukas Van Ness - could slip due to a run on WRs - would be in the mix, value might be too good to pass up if he's there
7. IOL O'Cyrus Torrence - should be and likely is on the shortlist - would be a tough decision to pass on him if WR and CB targets are gone, I believe he's the selection if that is the case
8. S Brian Branch - bit thin on talent in the secondary, I imagine pairing him with McKinney would be enticing
When this all shakes out, I think Zay Flowers will be NYG's 1st round selection. They'll see JSN gone, the CBs gone, and may trade a 4th or 5th to move up 2-3 slots to get him.
I don't think they'd go for another CB at that pick, if the top ones are all gone

If I'm going to do a similar list that I believe is more realistic, I'd have to take guys out of here.
Mainly JSN and Porter, just don't see them getting even to pick 20, much less 25.
Branch I have to rule out. He played corner and because of the AA limitations, he's projected to safety, and I don't think a position convert, particularly to the safety position, a position where the Giants have guys they like to play next to McKinney in Pinnock and Belton, that 25 is very rich for a guy like Branch. I wouldn't consider him at #57, even, I just think there will be better team fits there.

Jalin Hyatt
Keion White
Calijah Kancey
Deonte Banks
Kelee Ringo
Hyatt doesn't feel like NYG to me.
The question I have is, with the signing of Okereke, are you really going to spend another pick on a linebacker that you may only play on 2-downs. I don't think they would.
* I think we also might have a DT available at 25 that we were not expecting and that could create a situation where we move LW and draft his replacement.
and Azeez prolly isn't getting a 2nd contract here.

I understand this thinking and honestly I would agree based on what we've seen with how Schoen has addressed the WR position in free agency. I simply hope that this is a case of Schoen playing his cards close to the vest. I think the value with Hyatt is that he gives you something you don't have with the other guys at the position, and would create softer defensive boxes.

Hyatt is built like Devonta Smith and has excellent straight line speed. I would not rule him out.

I disagree with you regarding Hyatt, I think he should definitely be in the conversation, especially since Tennessee's offense looked quite similar to ours. But putting up those kind of numbers in the SEC is nothing to sneeze at.
I don't know where to stand with Quentin Johnson either. On the one hand, he's a guy you can throw the ball down the field to and can make some difficult, contested catches. But consistency at TCU is a question, it will be interesting to see who the Giants send to TCU's pro day on Thursday, if they send anyone.
