Discussion on possible Day 3 picks that you like to outperform their draft spots.
I'll start with a few of mine:
Chase Brown, RB, Illinois - Compact guy at 209 lbs and 5'9", but ridiculous athleticism and balance. Over 1600 yards rushing and almost 1900 scrimmage yards last year. Big 10" hands and didn't fumble a single time in his collegiate career, over 676 carries. 4.43 40 time at the combine, and a vert of 40".
Jartavius Martin, S, Illinois - Identified by Sy'56 on the Giants Insider podcast as a guy who could potentially fill the Julian Love role. Tomorrow is the scheduled release of Sy's safety preview (can't wait!), so we'll soon see a more comprehensive write-up on him. 5'11", 194 lbs, he's fast and explosive. Three INTs, 11 passes defensed, and 2 forced fumbles last year. Martin ran a 4.46 at the combine, with an outstanding 1.47 10-yard split and ridiculous 44" vert. 132 tackles last season, with 8.5 for loss and 5 sacks, to go with 2 INTs, 7 passes defensed, and 2 forced fumbles.
Jakorian Bennett, CB, Maryland - Not sure what's in the water in Maryland, but another tremendous athlete. 5'11", 188 lbs, Bennett ran a 4.3 40, 1.48 10-yard split, 40.5" vert, 11'1" broad. Bennett had 2 picks and 11 PDs last season.
Braeden Daniels, IOL, Utah - The 6'4", 294 lb Daniels will need to work on some bulk and strength, but he has good feet and wingspan at 33". He started early at LG for Utah before moving to left tackle.
Davis Allen, TE, Clemson - Not a tremendous athlete, but did post a 38.5" vert at the combine, 4.84 40. But Lance Zierlein described him as a "human vaccuum", the ball skills are special, aided by big 10" hands. He'll need to work on increasing his strength and base, filling out his frame, to hold up in the blocking game. Steady contributor at Clemson and big target, 6'6", 245 lbs.
Dorian Williams, LB, Tulane - Love the size/physical profile and athleticism of this prospect. 6'1", 228 lbs, almost a 34" wingspan, and 10 1/4" hands. He ran a 4.49 40 with a 1.54 split at the combine. Williams had great production, 132 tackles, 8.5 for loss, with 5 sacks, with 2 INTs, 7 passes defensed, and 2 forced fumbles. I love the fact that he made plays behind the line of scrimmage, something Sy also mentioned in the Giants Insider podcast...linebackers making plays behind the line of scrimmage translates well to the next level.

TE Payne Durham who looked like a rising star in the Reese's Senior Bowl.
Could also add:
ER Lonnie Phelps (Kansas), tenacity and motor that never quits. In six games this year, he had six sacks and 8.5 TFLs.
DT Moro Ojomo (Texas) just a monster against the run game, his specialty.
DT Brodric Martin (Western Kentucky ) a monster mountain man called a "discount version of Jordan Davis."
LB Dorian Williams (Tulane) "...was one of the best in the nation, allowing just 18 receptions for 156 yards, a 64.1 QBR and zero touchdowns".
LB DeMarvion Overshown (Texas Longhorns) although, not so much a sleeper lately.
WR Puka Nacua (BYU ) tall, strong, and insanely competitive. Likes to get involved in defense when not the target and loves hitting people. Reminds me of what Josh Hart has done for the Knicks in attitude and all out, all the time doing whatever it takes for the team to win.

Watch some tape. He can hit. Numbers are eerily similar to Love at ND, too. And in fact, the physical profile is nearly identical. Both 5'11", Love weighed in at 195 at the combine, Martin 194. Love a touch bigger wingspan, Martin 5/8ths bigger hands.
Martin tested much better at the combine, though. I know Love was drafted in the previous regime, and Wink inherited him, but again, the physical profile between the two are strikingly similar.

The Giants are at virtually every pro day, with larger contingents at the major conference schools. Of course they were at the Arkansas pro day.

Will do. Ole Miss has been supplying the NFL with some primo receiver talent for a good few years now, in spite of some subpar QB play.
