Only players who started or played meaningful snaps, not including someone that was here for a cup of coffee (i.e. John Ross) Here's my list, who else should be included?

I remember the game at tge Stadium where Carr caught Hayes from behind

If he was any slower than Hays I never saw it. I remember Carr chasing Hayes on a long completion. Didn’t catch him but didn’t lose an inch to him either. Very fast human being.
Stacey Robinson was an absolute blur in shorts.

Might not qualify on playing time. Rocky Thompson 1971 draft. The guy I wanted was Jack Tatum who was picked right after him by the Raiders.
Tyrone Wheatley actually had very good speed

He showed his speed as a track star at Indiana. Then he flopped at the Combine. Wish that had scared the Giants off.

Ran a 10.1 100 meters. According to wiki he was in the finals of the 1970 British Commonwealth Games, finishing 6th.

I also bet Hyatt will be way up there too (as well as Slayton)
Another was Tyrone Wheatley. He was very fast and I think

I ever saw on the football field. Only offensive player we had who could make other guys look like Division II athletes. I know his measured time was not as fast as some, but on the field his speed was insane.

I have a vague recollection of a receiver in the mid-80s who clocked in at the mid 4.3s back when no one practiced the forties so times were a full tick or two higher (i.e. Jerry Rice would have run faster than 4.7 if he had trained for the 40).

is the fastest guy I’ve seen run. There was a play he opened up his speed trying to run someone down, it looked alien.

This is the right answer. I'm sure there have been more than a handful of Giants that could beat him in a straight line footrace but I don't recall any Giant completely destroying angles like Odell did pre-injuries.

Was a track star and bound for the Olympics until a hamstring injury. He was primarily a hurdler but did run sprints and for relay teams.

That whole defensive backfield was lightning fast. One recollection is that Carr caught up to a player from behind and ran in front of him to tackle him head on. Wasn’t Clarence Childs on the Giants at about that time?

Had to take #1. Dude was one of the fastest guys in the league for a little while. Than I’d say #2 was Odell (Those slants he took to the house were ridiculous), I want to say Barkley but he seems to have gotten a bit slower every year since his rookie season so imma say David Wilson #3.

chasing down Bob Hayes. Henry Carr was crazy fast in his day. I think if the Giants get some injury luck this will be the latest Giants offense as a group ever. That includes the QB.

and I think we all agree that he plays much faster than that on the field.

Remember in preseason when Tuck ran down the sideline to catch a RB? I cant remember who but that was blazing fast

I think OBJ was the fastest on field player I have seen with the Giants just from the eye test. DRC was very fast too.

Primetime was the fastest player I have seen with Tyreek Hill hight there.

Arthur Marshall was fast, and Reeves brought him in as part of the "New Jersey Broncos." I think he was less injury-prone than just bad. The pairing with Dave Brown probably didn't help.

Mike Sherrard's mother was an Olympic hurdler, and Sherrard certainly fits the "couldn't stay on the field" description. But he came from the 49ers, not the Broncos. He went to Denver for a year at the end of his career.
