iPhone, kept iPhone in house using the Internet and walked around backyard to determine WI-FI range ⇒ perfect performance from headphones.

Next test, placed iPhone in pocket still using Internet and walked around backyard ⇒ total erratic performance from headphones.

Are headphones defective or are Blue tooth latency's to be expected ?

Were you streaming something or listening to something downloaded? If its the former, you probably got out of wifi coverage.

If you were listening to downloaded content, I got nothing.
The headphones are wifi?

Most wireless headphones use Bluetooth. If so, make sure you can see your headphones listed in your Bluetooth section in Settings.

hit distance limitations at about 40 feet, you're likely drifting to the outer edge of your range.
I walked the exact same path in the failed test as

You’re dealing with 2 different things here.

1) Bluetooth connectivity of your headphones to your phone.
2) WiFi connectivity of your phone to your router.

Sounds like the headphones are fine. You’re just exceeding your router’s WiFi range when in the yard.

In the first test your phone remained closer to the router. This has nothing to do with the headphones.
Yes, but something in your chain of comms

is being pushed beyond limits, apparently. When I tried to chain one particular pair of brand new earbuds and a brand new Galaxy tablet, I had Bluetooth/latency issues I could not resolve. Continue the process of elimination, swap out the headphones if you can, etc.
