NFT: What are you eating this week(end)?

Back to cooking after July 4th and several days of leftovers, but the past 2 days have been disappointing. I made a roasted bone-in pork butt with a vegetable sauce by Lidia Wed and it it pretty ordinary. Thursday I tried a new liver recipe from Michael Symon. with potatoes, apples and fried onions and it wasn't nearly as good as my usual with caramelized onion and bacon. I've got 2 chicken dishes coming up in the next 4 days, a jerk chicken and a Southern fried. I've made them both and I'm looking forward to them. Also 2 curries- an Indonesian coconut curry with beef and then an Indian lamb curry. With the lamb I'm going to try making a deep fried puffed bread called luchi. The bread has finally won an award after about 20 years.

for breakfast and leftovers for lunch. Tonight? After a supermarket detour for buttermilk it's chorizo and corn salad quesadillas.

Tomorrow I kill the last of the leftovers. The ribs will be done today so I'll fry some catfish. Thaw them overnight and put them in seasoned buttermilk tomorrow morning. Then it's dip them in a seasoned flour and cornmeal mix and drop them in hot grease.

Sunday dinner I fire up the grill again. This time it's chicken. 4 birds brined, halved and seasoned since Tuesday. I picked up some Alabama white sauce from Amazon and I'm to see how it tastes. Sides are quinoa with beans and garlic and blanched brussel sprouts and broccoli florets
I'm not a huge Lidia fan. Not quite Italian, not quite German. She's

from Istria. Some of her combos just seem strange to me. Can't argue with her success though.

We're out on LI (Stony Brook) again tomorrow for my niece's college graduation, hoping for my sister's sake that the weather clears in time. They hired a BBQ caterer to come and do ribs, chicken, etc.

Cooking inside tonight, already raining here. I think Mrs. in CT wants to have mussels, will see what they have. may do clams instead, will do a basic white with garlic, parsley, white wine. and a salad.

Sunday may just eat at the beach. Supposed to be a nice day. and there's a concert at 5:00

trying out a new spot in CT that we’ve heard good things about. Probably doing some combination of red meat and seafood and share a few things.

College buddies visiting this weekend (my wife will wish she went out of town) so probably a lot of eating out/bar food...BUT tonight (rain or shine) I got 2 Delmonico ribeyes from a local farm in WV. Mushrooms, asparagus, corn on the cob. All cooked over charcoal.
While I’ll be eating I won’t be cooking-

Take out pizza tonight, tomorrow will be a big Nicoise Salad. (I’ve been on an olive-oil packed tuna kick lately. Weird.) Thinking about homemade Italian subs for Sunday.

Chuck, how about an Italian Tuna Sub? One of my favorites. As for tuna, I've been buying a lot of Portuguese canned tuna, of course, packed in olive oil.

Drew- I actually had a French pan bagnat on my short list. I think sliced hard boiled eggs is the main difference from the Italian version. Will likely go with your suggestion as it will save me the step of preparing the eggs. After all these years I still detest prep work- including peeling eggs!

I had a veal chop over risotto that was so good I lost all sense of decorum and picked it up by the bone and ate it like a Viking. fortunately i was in a corner and the waiter laughed and said he always does that.

hey, DG. I'm crazy about Ala white sauce. Had some with wings last week. And it doesn't go bad for a very long time. Making your own buttermilk is easy, btw, just milk and vinegar. Keeps you from buying a quart of buttermilk, using one cup and throwing the rest away.

I've been watching her on PBS for several years and most of what I've made of hers has been quite good. Her scampi is mhy all-time favorite. So far I haven't seen anything on her show this season that looked appealing. I guess you have to pick your spots. Good luck with the weather for the weekend. Your shelllfish looks good whichever way you go

Have a fun weekend. My SIL gets together with a group of college friends every year. One of the guys is Josh Duhamel, and they were the impetus for Buddy Games.

lol, I go degree for degree with you :) Too hot to grill, but I don't mind cooking indoors.

Veal chops are probably our favorite thing to eat out. Really tough to find any good ones to buy, even on Wild Fork. But they're even hard to find in restaurants here.

that quart of buttmilk never goes to waste. I get when I fry catfish, whiting or chicken. And the few times I fry I do big batches. So I use the whole quart plus I add a little water and shake the carton to get every last bit

on the grill right now. Used my usual rib dry rub and using some wood chips to put some smoke on it. Grilling some corn too.
Tomorrow a bunch of food trucks are at a local brewery. I hope that the empanada truck and the Japanese truck show up.
I need to do a beer run. I see that Oktoberfest beers are starting to show up in the stores. Hope to find some.

Never did a chicken that way. I don't often make a whole chicken, I'm mostly into thighs and wings, and if I do I'd probably butterfly it. Seems like you've made it before and like it. Octoberfest in in July. OK. Can Christmas shopping be far off?

Tonight was grilled Grass-fed Marinated Flank Steak, Corn On the Cob butter salt, and Tomato Cucumber Salad.
Tomorrow headed to Paterson so maybe pick up Pollo a la Brasa (Peruvian Roast Chicken) on the way home. Usually pair with Salad and the Chifa Fried Rice.
Sunday Beach Day here so Nectarines, Cherries, Cheez-its, Sandwiches, and Teeuila Shots. Shots and beach chairs go nicely together.
Will stop somewhere for Calamari and cocktails in the evening. Then Monday...

My wife made my moms lasagna recipe but replaced the pasta with sliced deli chicken. It was a little sloppier since the pasta holds it together better but it was surprisingly good. I think next time if she doubles up the chicken slices so it’s a little thicker it will hold together better. Regardless it’s a great choice if you want to turn your favorite lasagna into a low carb version
played a show at Mohonk Mountain House tonight and have

a show at the Elizaville Diner tomorrow evening, so I'm basically watching people eat while I play music this weekend. Did make some local chicken sausage for Mrs S tonight before leaving for the show. And tomatoes from the garden are coming in early and plentifully - a positive result of this heat wave. Zucchini have not fared well in the garden, however, a heat-induced fungus being the culprit.

Steak and eggs, plus bacon and pancakes on the grill tomorrow morning.

Tortellini bake for midafternoon dinner Sunday. A favorite of the kids

same owners as Tavern on State and Fairhaven, both in New Haven. We had the mussels, salad, burger and fish (trout) with a glass of wine for her and bourbon for me.

That's an interesting take. To keep carbs down you cn also do lasagna with eggplant, zucchine, butternut squash or sweet potatoes. Maybe other things also. I've done an egplant version which ws realy good

That must suck watching/smelling everyone eat. Back on LI zucchini was about the only thing I couldn't kill. But they mostly came all at once which was annoying.

I struggled with low carb lunches for a long time, but I've found low net carb bread (Inked keto/keto seed) and Mission Carb Balance tortillas at Costco, and it's really changed my life. You can find Missions at a lot of supermarkets, but the price is better at Costco. I've also got lasagna recipes using tortillas instead of noodles.

Mrs. in UT is a big trout fan. It's better than me buying her flowers. Only one place locally, about 20 minutes away, that carries it and I don't shop there very often.

the past 2 days. Yesterday I did the jerk chicken in the air fryer and today I'm doing the beef curry in the Instant Pot. The chicken came out great, let's see how the curry goes.

It's an amazing place in its way. A big old hotel that they somehow built on top of a very steep location - not the highest mountain altitude-wise, but if you know the Gunks they are very steep. There are great views and hiking trails, plus the hotel itself is charming in an old-time way. I can't speak to the food (I just play music there), but the guests always seem happy to be there.
