NFT: What are you eating this week(end)?

Had some guys over tonight for TNF. Went simple this time- shrimp cocktail, Hatch cheeseburgers, Campbell hot links and bread and butter pizza, which Drew had suggested, and it went over really well. Sunday I'm having guests and making my chicken cacciatore. Monday is a Cajun seafood/sausage pasta in a cream sauce. Tuesday is a chile rellenos casserole-sort of a deconstructed chile rellenos with cheese and chilies layered and baked rather than stuffed and deep fried.
What are you all up to?

bucatini with spicy red clam sauce, with tomatoes, garlic, poblanos and cayenne from the garden. Clams from those tins though - but still good, and bottled clam juice is a good ingredient. Had enough sauce left to go a second night with some fresh marinated artichoke hearts from Adams featured instead of clams.

May not be your fancy recipes but some good eating to my taste ...

usual. Oatmeal for breakfast and leftovers for lunch. Tonight? I kill what's left of the shoulder. Pulled pork sandwiches.

There's still red beans and rice left so I kill that with some fried catfish.


Sunday dinner is mafaldine in a bolognese sauce. Ground beef, pork and veal, sausage, roasted and pureed mirepoix, red wine, basil and smoked neckbones all coming together to create a delicious sauce. Served with garlic bread

Anyone here been to Lazy Days down in Islamorada? I love to go on fishing trips down there and lived there for awhile working as a fishing guide when I got burn out. This place does a great job of preparing your catch from that day and I've tried to recreate their signature dish.

Lazy days style is panko bread crumbs, sauteed, topped with tomatoes, scallions, parmesan cheese, white wine, garlic, and key lime Butter. I have a ton of filets so don't need much in the way of sides, so just doing some salad and rice.
Seafood Bonanza

I picked up some cooked stone crab claws from costco, some sockeye salmon from TJs, and some mussels and bag of mixed seafood from shop rite.

Going to take the salmon and make teriyaki bites, lay them on top of a bed of rice and seaweed and top with sesame seeds, siracha, and QP mayo for a bit of a salmon bowl dish.

Crab is going to get hot sauté for a minute with a spicy chili garlic sauce

Mussels and seafood are going into a super spicy pasta fra diavolo.

The problem is, I havent figured out what Im going to feed the kids :)

I was in Greece for 10 days. It is extremely difficult to have a bad meal. The list of things that I ate was impressive...

This weekend it will be spaghetti with Greek meat sauce and a few other dishes that are still undecided.

If anyone is thinking about planning a trip to Greece, let me help point you in the right direction.

Stumbled across Taylor Brand Pork Roll out here in a local market. Can’t recall the last time I had it, one of my NJ childhood favorites. Going to grab a few pretty good Kaiser type rolls and some Boar’s Head American cheese, along with the standard eggs, and make breakfast sandwiches for the Giants (morning out here) game.

My cardiologist wouldn’t be happy but screw it.

Around football. Probably throw a pork loin in the smoker and make pulled pork sliders. Maybe some homemade Mac n cheese to go with that

The bolognese sounds great. I assume that'll take you thru the week. I used catfish, I had one piece I wanted to get rid of, to make a McD filot o fish knockout last week. Not real good. It had a batter, it's been a while but I don't think McD fish is battered, it's breaded iirc. Either way, meh

Seriously, the only thing I'm planning on having is Bourbon. Me & a small group of friends are leaving 4am Sunday morning for Louisville Kentucky, and the Bourbon Trail. I've wanted to do this trip for a while, but this year it includes the added bonus of not being able to watch the Giants game. (yeah, I am recording it)

As for food, we've kicked around a few restaurant ideas, but I'm always open to any restaurant, or specific dish recommendations, so please, give me some ideas BBI! Have a great weekend everyone.

hope all is well with everyone.

Tonight, doing our standard pizza night but having Detroit style this time.

Saturday, having a few couples over for dinner, planning on making mild spiced blackened skirt steaks with a Habanada pepper relish adding a little serrano to it for a touch of heat and a pan dripping sauce with demi-glace. With lyonnaise potatoes, and sauteed kale with garlic and shallots.

Sunday, nothing for the game not entertaining this week wife and I will do snacks and for dinner making chicken parmesan with Cacio e Pepe and roasted broccolini.
Hope the Giants can turn it around this week…

Chuck, love me some Taylor ham surprisingly easy to find here in NC either deli sliced, packets or 1lb log’s whole. I have it in my fridge all the time. Funny how you can tell south jersey and north from what they call it.

ok, good for you Chuck :) I never had a Taylor pork roll sandwich back East, so I don't miss them. But they are legendary. I hope it's as good as you remember.

we're having mussels over linguini tonight, Mrs. request. simple fresh tomatoes, parsley, garlic, olive oil and white wine.

bonus beach concert tomorrow evening so will probably just take a rotisserie chicken and a salad with us. take advantage of the great weather we're having.

looks like one last pesto Sunday. Basil needs to be used or dried out, starting to fade due to lack of sun on the patio now. and grilled fennel sausage, checking off another Ms. request,

Hey, Scott. Yeah, everything's good. With you too, I hope. Dinners sound great, but why would you want to spoil Saturday by making kale? :) Actually, cooked kale is ok.

Hey,Victor. What's it, Mother's Day weekend or something. You should spread being nice out over a longer time frame :) Going to a lot of concerts lately. Enjoy it. Funny, my basil has just started taking off the pst couple of weeks and I really don't need it. I'll got plenty of pesto in my freezer.

have some pork roll for the weekend. I ate an eggplant parm sandwich at a local tavern for lunch today. The parm part of it covers the entire plate in the style of the old Liberty Tavern in Fords, NJ. A fork and knife in needed to eat it. Tonight I grilled a flat iron steak with SPG over lump charcoal. I still have the other half of the steak for Sunday. I will try it on the sear burner of my propane grill. Of course it is still Oktoberfest season. The Giants will probably cause me to drink too many of them during the game.

I am 100% Greek and have been making the meat sauce for decades. Found a few pastry recipes that I did not have.
